This is one of those dishes you can whip together in no time. I created it one night when we needed something fast and easy and had very little in the house. i have changed the ingredients a time or two since that first time, but my family always says it tastes like more. Note: Please know you can substitute most of the ingredients for whatever you have in your refrigerator/pantry at the time. So have fun.

Yield Makes 4 first-course servings

Number Of Ingredients 11

3 large garlic cloves, left unpeeled
1 (1/2-inch-thick) slice large white onion
1 (3-inch-long) small dried ancho chile* (1/4 ounce)
1/2 cup water
3/4 teaspoon salt
1/2 teaspoon dried oregano (preferably Mexican), crumbled
2 tablespoons vegetable oil
10 ounces mushrooms, trimmed and thinly sliced
1 tablespoon tomato paste
3 1/2 cups low-sodium chicken broth (28 fluid ounces)
*Available at Latino markets, some specialty foods shops, some supermarkets, and Chile Today-Hot Tamale (800-468-7377).

Steps:

  • Heat a dry 12-inch heavy skillet over moderate heat until hot, 3 to 5 minutes. Lightly smash garlic in skins with side of a large knife, then add to skillet along with onion slice and cook, turning over once or twice with tongs, until onion is well browned and garlic is slightly softened, about 8 minutes.
  • Meanwhile, discard stem, seeds, and veins from chile and tear chile into 4 pieces. Add chile to onion and garlic in skillet and toast, pressing flat with tongs and turning over occasionally, until chile turns a brighter red, about 1 minute.
  • Discard garlic skins and coarsely chop onion, then purée garlic, onion, and chile in a blender with water, salt, and oregano until smooth.
  • Heat oil in skillet over high heat until hot but not smoking, then sauté mushrooms, stirring occasionally, until golden and any liquid is evaporated, about 6 minutes. Reduce heat to moderate, then add tomato paste and cook, stirring, 1 minute. Add purée and cook, stirring, 3 minutes. Stir in broth and simmer 5 minutes.

Tips for Making Authentic Mexican Mushrooms:

  • Use Fresh Mushrooms: Fresh mushrooms have a more robust flavor and texture than dried mushrooms.
  • Choose a Variety of Mushrooms: Using a variety of mushrooms, such as oyster, shiitake, and cremini, adds depth and complexity to the dish.
  • Sauté the Mushrooms Properly: Sauté the mushrooms over high heat until they are slightly browned and tender. This will develop their flavor and prevent them from becoming soggy.
  • Use Authentic Mexican Ingredients: Use authentic Mexican ingredients, such as fresh cilantro, onion, garlic, and chili peppers, to give your dish a truly Mexican flavor.
  • Add Some Heat: Mexican food is often spicy, so don't be afraid to add some heat to your mushroom dish. You can do this by using chili peppers, cayenne pepper, or paprika.
  • Serve with Authentic Garnishes: Serve your Mexican mushrooms with authentic garnishes, such as fresh cilantro, lime wedges, and sour cream. This will add a pop of color and flavor to your dish.

Conclusion:

Mexican mushrooms are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or side dish. They are a great way to add some variety to your Mexican cooking repertoire. So next time you're looking for something new to try, give Mexican mushrooms a try! You won't be disappointed.
