MEXICAN-STYLE PEPPER STEAK

Mexican-Style Pepper Steak image

Shaved steak is not a staple of Mexican cuisine. Most cooks prefer the slightly thicker beef milanesa cut, similar to minute steak. But Memo Pinedo, the proprietor of a restaurant and a food truck in Houston, both called Jarro Cafe, appreciates Angus beef sliced from sirloin for his tacos de bistec. It's so thin he can cook it in steam coming off a skillet of sizzling onions, tomatoes and jalapeños.

AUTHENTIC BAJA-MEXICAN STREET TACOS (CARNE ASADA)

Authentic Baja-Mexican Street Tacos (Carne Asada) image

On weekend getaways from San Diego to the beaches in Ensenada and Rosarito (Baja California), I found my favorite meal in the delicious soft skirt steak tacos sold by the taqueria street vendors. This recipe tastes exactly how I remember them - without having to make the trip across the border. Muy bueno! Top with some freshly squeezed lime juice and spicy salsa if you like.

Number Of Ingredients 12

3 cups fresh orange juice, or more as needed
2 tablespoons finely chopped fresh cilantro
2 tablespoons freshly squeezed lime juice
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 pinch cayenne pepper
3 pounds trimmed skirt steaks
16 (6 inch) white corn tortillas, or as needed
1 white onion, chopped, or to taste
1 small bunch fresh cilantro, chopped, or to taste

Steps:

  • Combine orange juice, 2 tablespoons cilantro, lime juice, garlic, salt, pepper, cumin, and cayenne in a large freezer bag. Submerge skirt steaks in the marinade. Seal the bag, squeezing out as much air as possible. Refrigerate, 1 to 8 hours.

Tips:

  • Choose high-quality steak: For the best flavor and texture, use a well-marbled flank steak or skirt steak.
  • Marinate the steak: Marinating the steak in a mixture of olive oil, lime juice, cumin, pepper, garlic, and cilantro helps tenderize and flavor the meat.
  • Cook the steak over high heat: This will help create a flavorful crust on the outside while keeping the inside tender and juicy.
  • Slice the steak against the grain: This will make the steak more tender and easier to chew.
  • Use fresh tortillas: Fresh tortillas make a big difference in the overall taste of the tacos.
  • Load up the tacos with toppings: Guacamole, pico de gallo, sour cream, and shredded cheese are all classic taco toppings.

Conclusion:

Mexican-style cumin-pepper steak tacos are a delicious and easy-to-make meal that is perfect for any occasion. The combination of flavorful steak, tangy marinade, and fresh toppings makes these tacos a surefire hit.
