- Cut the pound cake in medium-size slices.
- Scoop a ball of ice cream and wrap completely with the slices of cake, patching where needed with smaller pieces.
- Wrap the balls tightly with plastic wrap, forming a round shape. Freeze at least 5 hours or overnight.
- Heat the oil in a deep fryer or heavy pan.
- Stir cold sparkling water very slowly into the flour; whisk in the egg to create the batter.
- Remove the ice cream balls, one at the time, from the freezer. Dust the surface with flour. Dip into the batter, coating completely. Quickly lower coated ice cream balls into the oil; fry until golden, about 25 seconds. Remove with a slotted spoon.

MEXICAN STYLE TEMPURA WITH A CHILI CHOCOLATE SAUCE

- Preheat oven to 400 degrees F and preheat 6 ounces canola oil to 400 degrees F.
- For the tempura: In a small mixing bowl, add 1 cup flour, cornstarch, Sabor Italia, egg white and enough water to have a pancake-like consistency. Mix until thoroughly combined.
- Thread chicken slices onto wooden skewers. Season, to taste, with Sabor Italia. Dredge the skewers into 1/2 cup flour and then into prepared batter. Place skewers immediately into preheated oil and fry until golden brown. Place onto a baking sheet and finish in the oven, about 5 minutes. Do the same for the shrimp.
- For the sauce: In a medium saute pan over medium-high heat, saute the poblano, onions and a pinch of Sabor Italia. Add the red wine and chocolate and stir until combine. Add the chili powder and remaining Sabor Italia and stir until thickened. Add the chopped tomatoes and stir. Continue to cook for another 5 minutes. Remove from heat and stir in cilantro leaves.
- Place skewers on a platter and top with sauce.
- For the Sabor Italia: In a small bowl, combine all ingredients and store in an airtight container for up to 6 months

- Cut vegetables into finger-size pieces, the carrot pieces need to be a little bit thinner (because carrots take longer to cook).
- Mix tempura flour, with egg and water, add a small amount of ice.
- Heat up the frying oil. To check temperature drip a little bit of batter into the oil, if the batter sinks and then slowly float up and gets a nice golden brown crispy texture, it's ready to go.
- Dip vegetable pieces in tempura mixture then place in oil. Vegetables are done when they are a golden brown color and have a crispy texture; will cook about 2 to 3 minutes, carrots may take a little longer than other vegetables.
- Remove vegetables from oil with slotted spoon and place on paper towels to cool.
- For the Tofu chili dipping sauce:.
- Put tofu, egg yolk and sambal oalek in a blender. Start blender and slowly add oil in a steady stream. If you find the sauce too thick, add some water. Salt and pepper to taste.
