2 tablespoons raisins or sweetened dried cranberries

Steps:

  • Cut apples in half lengthwise. Using spoon, remove and discard cores, making at least a 1-inch indentation in each apple half. In microwavable pie plate, arrange apple halves, cut sides up. If needed, cut thin slice off bottoms to keep halves from tipping.
  • Fill each apple half evenly with raisins and brown sugar; dot with butter. Cover with microwavable plastic wrap, folding back one edge 1/4 inch to vent steam.

  • Pour oatmeal into a glass microwaveable dish and cook for two minutes; stirring once. (YES microwave the oats! I'm not sure why, but this is how I learned to do it in my 7th grade Home Economics class and it has worked for me every time). Combine all other ingredients (except raisins or fruit) into a bowl. Add in oatmeal and stir until well blended. To finish, pour mixture into a glass dish and microwave on high for 4-5 minutes or until golden brown. Stir once every minute. Cool on parchment paper. When cool, break apart big pieces into bite size pieces. Add raisins or fruit. Store in tightly covered container.

3 tablespoons packed dark brown sugar
1 cup old-fashioned rolled oats

1/3 cup puffed millet
1/4 cup untoasted coconut chips
2 tablespoons tricolor or plain prewashed quinoa

Steps:

  • Beat the egg white and salt with a fork until frothy in a microwave-safe large bowl. Beat in the oil and the brown sugar. Stir in the oats, seeds, millet, coconut chips and quinoa, and toss really well to make sure the dry ingredients are coated in the egg mixture.
  • Microwave on high for 3 minutes. (At this point there should be a nice mapley smell of oatmeal.) Turn granola out on flat surface, cover with wax paper and flatten. cool- best stored in refrig.
