1 jar (26 ounces) spaghetti sauce
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
2 cups 1% cottage cheese
1 tablespoon minced fresh parsley
1 large egg, beaten
1/4 teaspoon pepper
6 uncooked lasagna noodles
2 cups shredded mozzarella cheese, divided
1/2 cup water

Steps:

  • In a microwave-safe dish, microwave beef on high for 3 minutes; stir. Cook 2 minutes longer or until no longer pink; drain well. Stir in the spaghetti sauce, basil and garlic powder; cover and microwave for 2 minutes or until heated through. Set aside. In a bowl, combine the cottage cheese, parsley, egg and pepper., Spread 1/2 cup meat sauce in a greased microwave-safe 11x7-in. dish. Steps:

1 (16 ounce) package no-boil lasagna noodles
1 (30 ounce) can spaghetti sauce
2 lbs ricotta cheese
16 ounces mozzarella cheese, shredded
1 lb ground beef
1 tablespoon minced garlic
1/2 tablespoon basil
1/2 tablespoon oregano
salt & pepper

Steps:

  • In a small frying pan, brown the ground beef, basil, garlic, and oregano.
  • Drain and add Spaghetti Sauce then remove from heat and set aside.
  • In a square or rectangle shape Microwve Safe dish, place alayer of lasagna noodles across the bottom.
  • Cover with a layer of spaghetti sauce, a layer of Ricotta cheese, and a layer of Mozarella cheese.
  • Repeat one or two more times depending on the depth of your dish.
  • For the last layer, cover with another layer of lasagna noodles and spaghetti sauce.

This is another of those recipes my mom got from the 1980's microwave cooking class. You don't pre-cook the noodles for this. This recipe pre-dates turntables. To save wear and tear on your microwave's turn table take the glass turn table plate out, remove the roller ring and then put the plate back in upside down. This recipe requires a microwave safe 9x13 baking dish. I use a Pyrex one.

1 lb ground beef
1 quart spaghetti sauce
1 (8 ounce) box lasagna noodles, noodles1/2 box
1/2 cup water
3 cups mozzarella cheese
1 lb ricotta cheese
1/2 cup parmesan cheese
1/2 teaspoon salt (optional)

Steps:

  • Brown ground beef in a microwave safe dish (6-7 min on high).
  • Add sauce and water to beef and stir.
  • Cook 5-6 min on high.
  • Put a thin layer of sauce/beef mixture on bottom of a microwave safe 9x13 baking dish.
  • Butter dry uncooked noodles with ricotta cheese and place cheese side up on top of sauce.
  • Sprinkle mozzarella on top of Ricotta.

6 uncooked lasagna noodles
1 lb ground turkey italian sausage
1 large jar favorite spaghetti sauce
3 Tbsp snipped fresh basil
2 Tbsp snipped fresh oregano
2 c cottage cheese
1/2 c grated parmesan cheese
1 c shredded mozzarella cheese
4 slice provolone cheese

Steps:

  • 1. Brown sausage well in large skillet. Pour off any fat. Stir in the Prego sauce and 3-4 tablespoons snipped fresh herbs, such as basil and oregano. Simmer 10 minutes.
  • 2. Spread 1 cup of sauce in the bottom of an 8x12-inch DEEP microwave-safe baking dish. Lay 3 lasagna noodles evenly over top.
  • 3. Spoon half the cottage cheese over noodles, and top with half the remaining sauce.
  • 4. Sprinkle with half the parmesan cheese and half the mozzarella. Then, repeat layers.
  • 5. Cover tightly with pleated plastic wrap such as Press'N Seal, to seal tightly. Cook 5 minutes on high in the microwave.
  • 6. Let rest 1 minute, then cook 4 minutes more on high. Remove from microwave and remove plastic wrap.
  • 7. Cut the slices of provolone cheese in half, and arrange evenly over top of lasagna. Place uncovered in 375° oven for 8-10 minutes to brown and melt the provolone cheese.
  • 8. Allow to rest 10 minutes before slicing.

1 lb ground beef
1 clove garlic, minced
1 c water
6 oz tomato paste
14 oz tomato sauce
1 1/2 tsp italian seasing
1/2 tsp salt
1/2 tsp sugar
1/4 tsp pepper
1/2 lb ricotta cheese, part skim (you can use all ricotta and skip the cottage cheese if desired)
1/2 lb cottage cheese
1/2 c parmesan cheese, grated
1 egg, beaten
2 Tbsp parsley, chopped
1/2 lb lasagna noodles, cooked
1/2 lb mozzarella cheese, shredded
parmesan cheese, grated

Steps:

  • 1. Place beef and garlic in 2 quart casserole.
  • 2. Cook, covered on full power 4 to 5 1/2 minutes. Stir 1/2 way through time. Drain.
  • 3. Add next 8 ingredients. Cook covered full power 6 to 8 minutes until boiling. Stir 1/2 way.
  • 4. Blend ricotta and cottage cheese (if using), 1/2 cup Parmesan, egg, and parsley in small bowl.
  • 5. Layer 1/2 of noodles in 2 quart dish. Spread 1/2 of cheese mixture, 1/2 mozzarella, and 1/2 meat sauce.
  • 6. Repeat layers.
  • 7. Cover loosely with saran wrap.
  • 8. Heat full power 13 to 16 minutes.
  • 9. Sprinkle top generously with Parmesan.
  • 10. NOTE: This freezes well. I usually double the recipe and freeze some.
