I LOVE rice pudding and this is one of my favorite! This is super easy and creamy. Guaranteed not to scorch or curdle! I always add some cinnamon and/or nutmeg or it's great without! Yummy warm or cold. I use leftover rice. This is one of my kids favorite desserts, will not disappoint

Number Of Ingredients 8

1/2-3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
3 cups milk
1 egg
2 -3 cups rice (I use Jasmine!)
2 tablespoons butter
1 teaspoon vanilla

Steps:

  • Make sure the rice is cooked ahead of time.
  • Whisk first 6 ingredients. And raisins if you want, we prefer without ;).
  • Put in microwave and cook 1 - 1 1/2 minutes.
  • Remove and whisk.
  • Put back in microwave for another 1 - 1 1/2 minutes.
  • Remove and whisk.
  • Continue above steps until desired thickness (don't get too thick, you want it a little less thick than desired since it will continue to thicken as it sits).
  • Add butter and vanilla once it's at desired thickness. You can omit butter to save on calories!
  • Add anything else you want (cinnamon, nutmeg, fresh berries if it's cold, etc).
  • Enjoy!

My wife ran an daycare in our home. This is ome of the kid meals they gave us to help with meal planning. The servings are kid size, but it should be easy to ramp it up to adult portions if needed. You can use cooked regular rice instead of minute rice.

1/2 cup milk
1/4 cup raisins
1 egg
1/4 teaspoon cinnamon
1/2 cup Minute Rice

Steps:

  • Spray a cereal bowl with non-stick cooking spray.
  • Mix together milk and egg.
  • Add rice, rasins and cinnamon and stir together.
  • Microwave on high for 3 min (if you don't have turntable in your microwave cook on high for 2 min, rotate the bowl and cook another min on high).
