Tablet is a popular treat in Scotland and can be made in many different ways and most of them involve boiling sugar for a long time and then beating well - this does make a delicious sweet, but there is an easy way for a quick treat using your microwave, the recipe is written with a 900 w oven, but you can adjust it to suit your own - mine is a 750 w and I did it for 12 minutes instead of 10. The other bonus of this recipe is that as it does not use condensed milk it is a wee bit cheaper to make too!

5 fluid ounces evaporated milk
4 ounces unsalted butter, cubed
1 lb caster sugar

Steps:

  • Line a square cake tin around 8 " with foil.
  • In a large microwave safe bowl, the biggest one that will fit in your oven, combine the sugar, evaporated milk and the butter.
  • Cook on high heat for 10 minutes, stopping and stirring every 2-3 minutes.
  • Remove from the oven and beat for 2 minutes, I used an electric rotary whisk.
  • Pour in lined tin, or if you have a silicon one you can omit the lining.
  • Mark into squares while soft and leave to set before cutting into bite size pieces.
