Yield Serves 6

Number Of Ingredients 17

For the marinade
1 cup plain yogurt
1/2 cup fresh lemon juice
1 garlic clove, minced and mashed to a paste with a pinch of salt
1/2 teaspoon dried thyme, crumbled
8 skinless boneless chicken thighs (about 1 1/2 pounds)
For the sauce
1/3 cup plain yogurt
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
2 teaspoons fresh lemon juice, or to taste
1 tablespoon finely chopped fresh parsley leaves
2 teaspoons finely chopped fresh mint leaves, or to taste
1 small red onion, sliced thin
1 1/2 tablespoons olive oil
1 tomato, minced
1 tablespoon sesame seeds, toasted lightly
6 whole-wheat pita loaves

Steps:

  • Make the marinade:
  • In a bowl whisk together the yogurt, the lemon juice, the garlic paste, the thyme, and pepper to taste.
  • Arrange the chicken, pricked in several places with a fork, in one layer in a large shallow dish, pour the marinade over it, and let the chicken marinate, covered and chilled, turning it once, for at least 3 hours or, preferably overnight
  • Make the sauce:
  • In a bowl whisk together the yogurt, the garlic paste, the lemon juice, the parsley, the mint, and salt and pepper to taste.
  • On an oiled grill set about 6 inches over glowing coals or in an oiled ridged grill pan set over moderately high eat grill the chicken (discard the marinade) turning it, for 12 to 15 minutes on each side, or until it is cooked through. While the chicken is cooking, in a skillet cook the onion in the oil over moderate heat, stirring, until it is softened and lightly golden. Remove the skillet from the heat, add the tomato and the sesame seeds, and season the mixture with salt and pepper. Transfer the chicken to a cutting board and cut it diagonally into thin slices. Cut off a small piece of each pita loaf to form an opening and heat the pita loaves on the grill, turning them once, for several seconds, or until they are just softened. Divide the chicken, the onion mixture, and the sauce among the pita loaves.

### **Summary:** 1. **The Secret of Yogurt:** Yogurt acts as a natural marinade, infusing chicken with its tangy and creamy flavors while keeping it moist and succulent. It also helps in creating a crispy and golden-hued skin on the chicken. 2. **Choosing the Right Yogurt:** Opt for plain yogurt that has a thick and creamy texture. Greek yogurt works exceptionally well due to its higher protein content, resulting in a more flavorful marinade. 3. **Aromatic Spices:** Elevate the dish with a harmonious symphony of spices. Cumin, coriander, paprika, and cayenne bring warmth and depth of flavors, while turmeric adds a vibrant yellow hue. 4. **Garlic and Ginger Paste Perfection:** Create a flavorful base by blending together ginger and minced or grated fresh ginger. This aromatic foundation provides a solid base for the marinade. 5. **Lemon Juice and Lime Zest Symphony:** A hint of citrus brightness and tanginess comes from the combination of fresh-s squeezed orange and the zest of fresh limes. The vibrant citrus notes cut through the richness of the yogurt and spices, creating a refreshing balance. 6. **The Importance of Marinating Time:** Patience is key. Marinate the chicken for at least 4 hours, preferably 12-24 hours, to allow the flavors to penetrate the chicken and develop a delectable depth of taste. 7. **Grilling or Pan-Seared Delight:** You can either treat your taste buds to a flavorful grilled experience or indulge in the comfort of a pan-seared feast. Both methods yield succulent and crispy chicken infused with the aromatic marinade. 8. **Accompaniments to Complement:** A refreshing cucumber, yogurt, and dill raita provides a soothing contrast to the savory chicken. Additionally, a vibrant and tangy tomato-cucumber relish adds a pop of freshness. ### **Conclusion:** Eastern Yogurt chicken brings a delightful array of flavors to your plate. The combination of yogurt marinade, aromatic spices, and fresh herbs results in a succulent, crispy, and flavorful chicken dish that is perfect for any occasion. Elevate your culinary skills and tantalize your taste buds with this tantalizing and easy-to-make dish.
