A very moist nut bread with an orange glaze on top. Delicious! They make nice gifts if you tuck one in a basket with a pretty napkin and bow. This is one of the recipes that I did in "Christmas Goodie Class" a couple of years ago. Everyone got to taste it and loved it. Enjoy!

MARGE'S ZUCCHINI PIE

Marge's Zucchini Pie image

One of my co-workers gave me this recipe years ago, and now it's a staple. We just don't feel like it's summer until we've eaten some. We usually eat it for dinner, but it's equally good for breakfast or brunch.

Time 1h

Yield 1 pie, 6 serving(s)

Number Of Ingredients 12

4 cups zucchini, thinly sliced
1 cup sweet onion, diced
1 tablespoon olive oil
1/2 cup flat leaf parsley, chopped
2 garlic cloves, chopped
1 teaspoon herbes de provence (or use oregano)
1 teaspoon kosher salt
1/2 teaspoon black pepper, freshly ground
2 tablespoons Dijon mustard
2 eggs
8 ounces monterey jack cheese, shredded
1 prepared pie crust

Steps:

  • Preheat oven to 375 degrees.
  • Saute zucchini, onions and garlic in olive oil until soft. Stir in parsley, herbes de provence, salt and pepper. Remove from heat.
  • Beat the eggs and then add the cheese to the beaten eggs. Pour into the veggie pot and combine.
  • Spread dijon mustard on bottom of pie crust. Add zucchini mixture to crust. Bake for 35-40 minutes.

Tips:

- **Choose the right zucchini.** Look for medium-sized zucchini that are firm and have no blemishes. Avoid zucchini that are too large, as they may be watery and have a bitter taste. - **Grate the zucchini.** Grating the zucchini helps to release its moisture and makes it easier to incorporate into the pie. - **Use a good quality cheese.** The cheese is one of the main ingredients in zucchini pie, so it's important to use a good quality cheese that melts well. Cheddar, Parmesan, and mozzarella are all good choices. - **Don't overmix the batter.** Overmixing the batter can make the pie tough. Mix just until the ingredients are combined. - **Bake the pie at a high temperature.** This will help to create a crispy crust and prevent the pie from becoming watery. - **Let the pie cool before serving.** This will help the pie to set and make it easier to slice.

Conclusion:

Zucchini pie is a delicious and versatile dish that can be served as an appetizer, main course, or side dish. It's a great way to use up extra zucchini from your garden, and it's also a good source of vitamins and minerals. With its simple ingredients and easy-to-follow instructions, this zucchini pie recipe is sure to become a favorite in your kitchen.
