Steps:
- Mix the cheese with the mincemeat and spring onions. Spread each sourdough slice with 1 tsp of the mayonnaise. Put two of the slices mayo-side down on a board and spread the other side with the cheese mixture. Sandwich with the other slices so the mayonnaise is on the outside.
- Heat a large non-stick frying pan over a medium heat. When hot, fry the toasties for 3-4 mins on each side, weighing them down with a heavy-based pan until crisp and golden and the cheese is melted. Cut in half and serve.

MINCEMEAT
Mincemeat is a traditional English treat that is usually used as filling for mince pies during Christmas, but it tastes great mixed with vanilla ice cream, as well. This recipe uses butter instead of the traditional suet, which makes this mincemeat suitable for vegetarians. Store in the refrigerator for up to 6 weeks.

- Combine cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Reserve 1 heaped teaspoon for the mincemeat. Store the rest in a small jar for a later use.
- Inspect two 12-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until mincemeat is ready. Wash new, unused lids and rings in warm soapy water.
- Combine apple, sultanas, sugar, currants, raisins, and butter in a saucepan. Cook over low heat and stir gently until butter has melted. Stir in chopped almonds, orange zest, 1 teaspoon of mixed spice, and cinnamon. Bring mixture to a simmer and cook, stirring occasionally, 5 to 10 minutes.
- Remove from heat and set mincemeat aside to cool down for 30 minutes. Stir in brandy. Spoon into sterilized jars.

CHEDDAR CHEESE TOASTIES
WE were dairy farmers for years, so we all enjoyed a hearty breakfast after morning milking. Having a bit of cheese satisfies the appetite and helps hold you over until the next meal. Since I always had a lot of cheddar cheese on hand, I used it in many of my recipes. -Helen Davis, Waterbury, Vermont

MINCEMEAT CREAM CHEESE PASTRIES
I've been making these delectable little morsels since Thanksgiving of 1976. If you like mincemeat, these are delicious. A little more time consuming than the traditional pie but well worth the effort!I like to use the condensed mincemeat in the box and add about 1-2 tablespoons of bourbon as part of the liquid- yum......Refrigeration time is not included in prep time.

Tips:
- Use good quality bread. This will make a big difference to the taste and texture of your toastie. Sourdough or whole wheat bread are good choices.
- Don't be afraid to experiment with different cheeses. A blend of cheddar and mozzarella is a classic, but you could also try brie, goat's cheese, or blue cheese.
- Add other ingredients to your toastie to make it even more delicious. Sliced ham, bacon, mushrooms, or onions are all great options.
- If you're using a lot of fillings, be sure to butter the bread on both sides. This will help to prevent the bread from getting soggy.
- Cook your toastie until the cheese is melted and bubbly. This will ensure that it's gooey and delicious.
