MINI CHIP SUGAR COOKIES

These are good and a nice change from chocolate chip cookies. (To sour milk for using in place of buttermilk, use 1 1/2 teaspoons vinegar plus milk to equal 1/2 cup.)

Number Of Ingredients 11

⅓ cup butter, softened
½ cup packed brown sugar
¾ cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup buttermilk
1 ½ cups mini semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium cookie sheet.
  • Cream butter or margarine, brown sugar and sugar in a large mixer bowl until light and fluffy. Add egg and vanilla; beat well. In a separate bowl, combine flour, baking soda, baking powder and salt; add alternately with buttermilk to creamed mixture. Beat well. Stir in chips. Drop by rounded teaspoons onto the prepared cookie sheet.
  • Bake for 10-12 minutes in the preheated oven, or until lightly browned. Remove from cookie sheet and cool.

Egg, butter, vegetable oil or water as package directs
Sugar, if needed
Cinnamon, if needed
108 (about 1 cup) miniature semisweet or milk chocolate candy drops for baking (from 10-oz bag), if needed

Steps:

  • Heat oven to 350°F. Make pouch of cookie mix as directed on package.
  • Shape dough as directed for each kind of cookie, below.
  • Bake 8 to 10 minutes or until edges are light golden brown. Mini Chocolate Chippers: Make chocolate chip cookie mix as directed. Drop dough by rounded 1/2 teaspoonfuls 1 inch apart on ungreased cookie sheet. Bake as directed, above. Cool 1 minute before removing from cookie sheet. Mini Peanut Blossom Cookies: Make peanut butter cookie mix as directed. Shape dough into 1/2-inch balls; roll in sugar. Place balls 1 inch apart on ungreased cookie sheet. Bake as directed, above. Immediately press miniature chocolate candy drop in top of each cookie. Cool 1 minute before removing from cookie sheet. Snicker-Do-Littles: Make sugar cookie mix as directed. Shape dough into 1/2-inch balls. Mix 3 tablespoons sugar and 1 teaspoon cinnamon. Roll dough balls in sugar mixture. Place on ungreased cookie sheet. Bake as directed, above. Cool 1 minute before removing from cookie sheet.

I was given this recipe 20 years ago by my then boyfriend's soon to be step mom and its still my favorite for "chocolate chip" cookies. I substituted the Semi Sweet Mini M&Ms (which make the best cookies) for the chocolate chips it originally called for, but you can use chocolate chips, regular M&Ms, the Milk Chocolate Mini M&Ms or whatever you like. Play with the spices too.

2/3 cup softened butter
2/3 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 tablespoon vanilla extract
3 -3 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4-1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
12 ounces miniature M&M's chocolate candies
1 cup chopped walnuts

Steps:

  • Cream the butter, shortening, sugar and brown sugar together. When light in color add the eggs and vanilla mix well. Next slowly add the dry ingredients. Once mixed stir in the nuts and M&Ms.
  • Drop by teaspoons onto baking sheets.
  • Bake at 375 degrees for 8 - 10 minutes.
  • Let cool slightly then transfer to cooling racks.

I love baking cookies to give as gifts to my family and friends. I created this recipe for my annual holiday cookie platter and it received rave reviews from both children and adults. 1 cup shortening
1 cup packed light brown sugar
1/2 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 package miniature semisweet chocolate chips (10 ounces)
FILLING:
1 vanilla bean
3 large egg whites
1/2 cup sugar
1/2 teaspoon vanilla extract
3/4 cup unsalted butter, room temperature

Steps:

  • Preheat oven to 350°. Cream shortening and sugars until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Stir in chocolate chips. Chill dough for 1 hour., Shape teaspoonfuls of dough into 1-inch balls. Place 1-1/2 in. apart on ungreased baking sheets. Bake until edges begin to brown, 8-10 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely., Meanwhile, for filling, split vanilla bean lengthwise. Using a sharp knife, scrape seeds from center into top of a double boiler over simmering water; discard bean. Add egg whites, granulated sugar and vanilla extract. Whisking constantly, heat mixture until sugar is dissolved and a thermometer reads 160°, 8-10 minutes. Transfer to a stand mixer fitted with a whisk attachment., Whisk egg white mixture on high until it cools to room temperature, 8-10 minutes. Reduce speed to medium; gradually add butter, 1 tablespoon at a time, beating well after each addition. Increase speed to high; beat until smooth., To assemble, transfer filling to a reusable pastry bag. Pipe about 1 teaspoon on bottoms of half of the cookies; cover with remaining cookies. Store in airtight containers.
