In other words....this is to die for....full of scrumptiously moist pieces of banana, pecan nuts and chocolate chunks with delicate undertones of spice...all topped with a decadent caramel glaze which soaks into the cake creating the most heavenly experience ever found in a cake...

2 cups plain flour
1 teaspoon cinnamon
1/2 teaspoon grated fresh nutmeg
1/4 teaspoon ground cloves
1 teaspoon salt
1 teaspoon baking soda
3 large eggs
1 1/4 cups sunflower oil
1 3/4 cups caster sugar
1 tablespoon pure vanilla essence
3/4 cup coarsely chopped toasted pecan nuts
3 ounces good chocolate, broken into chip size pieces (I favour Green and Blacks)
3 ripe bananas, peeled and diced
1 1/4 cups of firmly packed soft light brown sugar
1 tablespoon milk
1 tablespoon double cream
4 tablespoons unsalted butter, cut into pieces

Steps:

  • Pre-heat the oven to 180*C/350*F. Grease and flour a 12 cup tube or bundt pan, shaking out all the excess flour.
  • Sift together the flour, cinnamon, nutmeg, cloves, salt and baking soda. Set aside. Beat together the eggs, caster sugar and oil with your electric beaters on medium speed until the sugar is totally emulsified, about 2 to 3 minutes. Beat in the vanilla essence. Slowly beat in the dry ingredients, scraping down the bowl to make sure it all gets mixed in well. Fold in the pecan nuts, chocolate and banana chunks very carefully with a rubber spatula taking care not to mush the bananas up. Scrape into the prepared pan.
  • Bake for 50 minutes. Test with a wooden skewer to see if it is done. It should come out clean if it is. If not, bake for an additional 5 to 10 minutes.
  • In the meantime combine all the topping ingredients in a small saucepan over low heat and cook until the butter and sugar are melted and it begins to boil. Simmer for about 10 minutes while you are waiting for the cake to finish.
  • Remove the cake from the oven and poke holes all over the hot cake (without removing from pan) and spoon the caramel glaze over the top, stopping every now and then to let the cake absorb it. If it starts to pool, poke some more holes in the cake. Let cook completely in the pan on a wire rack before removing and unfolding it onto a plate. I then put another plate on top and flip it over until the flat side is on the top again. Delicious!

1/2 cup diced strawberries, plus sliced strawberries for topping
1/2 cup chilled heavy cream
3 tablespoons confectioners' sugar
1/4 teaspoon vanilla extract
12 chocolate wafer cookies
1/2 small banana, sliced
Chocolate syrup or sauce, for topping
2 tablespoons chopped toasted peanuts, for topping (optional)
2 maraschino cherries, for topping (optional)

Steps:

  • In a blender, puree the diced strawberries with 1 to 2 tablespoons water until thick and smooth. Using an electric mixer, whip the cream until soft peaks form, 3 to 5 minutes. Add the confectioners' sugar, vanilla and strawberry puree and continue whipping until slightly stiff peaks form, 1 to 2 minutes.
  • For each dessert, place a chocolate cookie on a plate. Dollop with 1 tablespoon of the strawberry whipped cream; gently press another cookie on top. Repeat, alternating cookies and whipped cream, to make a stack 6 cookies high, ending with a cookie. Wrap lightly in plastic wrap and refrigerate until the cookies soften slightly, 3 to 4 hours. Cover and refrigerate the remaining whipped cream.
  • Just before serving, use an offset spatula or butter knife to smooth the sides of the cakes. Top each cake with a few strawberry and banana slices and some of the remaining whipped cream. Drizzle with chocolate syrup. Sprinkle with peanuts and top with a maraschino cherry.

5 ounces bittersweet chocolate, chopped
1/2 cup unsalted butter
4 large eggs, room temperature
1/3 cup sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
1/4 cup all-purpose flour
Baking cocoa
CARAMELIZED BANANAS:
2 tablespoons unsalted butter
2 medium bananas, cut into 1-inch slices
2 tablespoons sugar
SAUCE:
1 cup white wine or unsweetened apple juice
1/2 cup sugar
2 ounces bittersweet chocolate, chopped

Steps:

  • Preheat oven to 400°. In a microwave, melt chocolate and butter; stir until smooth. Cool. Beat eggs, sugar, vanilla and salt on high speed until thick and pale, about 5 minutes. Sift in flour; mix just until combined. Fold in chocolate mixture., Spoon batter into 8 buttered 4-oz. ramekins dusted with cocoa. Place ramekins on a baking sheet. Bake until a toothpick inserted in centers comes out clean, 12-15 minutes. Run a small knife around sides of ramekins. Invert onto cooling rack; let stand 5 minutes. Remove ramekins; place cakes on individual plates., For bananas, melt butter in a large skillet over medium heat. Toss banana slices with sugar until well coated; arrange in a single layer in skillet. Do not stir bananas until bottoms are golden brown, 4-5 minutes. Turn; cook until second side is golden brown, 4-5 minutes longer. Remove from heat. Place bananas on plates with cakes., For sauce, heat wine and sugar in a small saucepan over medium heat. Bring to a boil. Reduce heat; simmer until slightly thickened, about 10 minutes. Remove from heat; cool slightly. Whisk in chocolate. Pour over cakes.

Add some mini chocolate chips to the vanilla custard, if you like, but be sure to cover the bananas completely to keep them from oxidizing. This pudding is best the day it's made, or up to 24 hours later - but it's so delicious that it may not last that long.

3/4 cup/150 grams granulated sugar
1/4 cup/30 grams cornstarch
1/2 teaspoon kosher salt
3 cups/710 milliliters whole milk
6 large egg yolks
2 teaspoons pure vanilla extract
3/4 cup/175 milliliters cold heavy cream
45 thin, round chocolate wafers (from 1 9-ounce/255-gram package)
4 large ripe bananas
1 1/2 cups/355 milliliters cold heavy cream
2 tablespoons confectioners' sugar
Cocoa powder

Steps:

  • Place a fine-mesh sieve over a medium bowl, and set it aside.
  • In a medium saucepan, whisk together the sugar, cornstarch and salt. Add the milk, little by little, while whisking to incorporate it fully. Whisk in the egg yolks. Heat the mixture over medium, stirring constantly, until it has thickened and just come to a low boil, about 4 to 5 minutes. Continue to cook the custard while whisking for another minute, then immediately pour it into the sieve, pushing it through with a small spatula. Stir in the vanilla.
  • Chill the custard until it reaches room temperature or colder, about 1 1/2 hours. (To speed the process, you can spread the custard into an even layer on a rimmed baking sheet. Stir often until the custard has cooled, about 10 minutes. Transfer the custard back to the medium bowl.)
  • Whip the 3/4 cup heavy cream to stiff peaks. Fold the cream into the custard.
  • Add about 1/2 cup of custard to the bottom of a 2-quart serving dish, spreading it in an even layer. Top with a layer of cookies (about 15), breaking them as needed to fit the edges. Slice the bananas 1/4-inch thick, and top the cookies with a layer of bananas.
  • Dollop 1/3 of the remaining custard on top of the bananas and, using an offset spatula, gently spread it into an even layer until the bananas are completely covered. Repeat the layering of cookies, bananas and custard two more times, finishing with custard.
  • Cover with plastic wrap and chill until the custard is cold and the cookies have softened, at least 4 hours or up to 24 hours.
  • To serve, whip the 1 1/2 cups heavy cream and confectioners' sugar to medium-stiff peaks. Top the pudding with the whipped cream, and sprinkle with cocoa powder, dusting it through a fine-mesh sieve. Serve cold.

I'm very excited about this mini chocolate cupcake recipe. It saves time, money, and most of all, butter! I love using butter for cupcakes but it's pricey and you may notice your cupcake is a little dense if it's sitting out for a while. This recipe contains extra-virgin olive oil and no coffee. Use good quality cocoa powder because I do notice a difference when using generic. I hope you all enjoy it as much as I do! Happy baking!
