These take about 5 minutes to prepare - how's that for quick? My kids love having their own little pie. I got this recipe from the top of a yogurt container - it's a Rachael Ray recipe.

Number Of Ingredients 11

3 eggs, separated
¾ cup white sugar
2 tablespoons cornstarch
2 tablespoons all-purpose flour
1 cup water
6 tablespoons freshly squeezed lemon juice, or to taste
3 tablespoons freshly grated lemon zest, or to taste
1 tablespoon butter
6 prepared mini graham cracker pie crusts
¼ cup white sugar
¼ teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat the 3 yolks in a bowl until smooth; set aside.
  • Whisk 3/4 cup of sugar with cornstarch and flour in a saucepan until thoroughly mixed; beat in the water, lemon juice, and lemon zest. Spoon the hot lemon filling into the mini graham cracker crusts.
  • Beat the egg whites in a metal or glass bowl with 1/4 cup of sugar and the almond extract with an electric mixer until the meringue is fluffy and holds stiff peaks, 1 to 2 minutes. Top each lemon pie with about 1 inch of the meringue and spread into decorative swirls and peaks with a spatula. Cover all the lemon filling with meringue.
  • Bake in preheated oven until the meringue is lightly golden brown with darker brown peaks and swirls, about 10 minutes. Allow to cool before serving.

Tips:

  • Choose the right lemons. Meyer lemons are the best choice for this recipe, as they are sweeter and less acidic than regular lemons. If you can't find Meyer lemons, you can use regular lemons, but you may need to add a little more sugar to the filling.
  • Grate the lemon zest finely. This will help to release the lemon's flavor into the filling.
  • Don't overbeat the whipped cream. Overbeaten whipped cream will become stiff and grainy. You want it to be light and fluffy.
  • Chill the pies for at least 2 hours before serving. This will help the filling to set and the flavors to meld.

Conclusion:

These no-bake mini lemon cream pies are the perfect summer dessert. They are light, refreshing, and packed with lemon flavor. They are also very easy to make, and can be made ahead of time. So next time you are looking for a quick and easy dessert, give these mini lemon cream pies a try. These pies are also a great way to use up leftover egg whites. If you have some egg whites left over from another recipe, you can freeze them until you have enough to make these pies. These pies are also a great option for a gluten-free dessert. Simply use a gluten-free graham cracker crust.
