3 cups crumbled queso fresco cheese
1 1/2 teaspoons ancho chile powder
2 tablespoons chopped chipotle chiles in adobo sauce (from 7-oz can)
6 tablespoons chopped green onions (6 medium)
1 1/2 cups finely chopped pepitas (pumpkin seeds)
