Time 15m

Number Of Ingredients 5

1 c light brown sugar, firmly packed
1/2 c all purpose flour
2 eggs, beaten
2/3 c melted butter (measure before melting)
1 c pecans, coarsley chopped

Steps:

  • 1. Preheat oven to 350. Grease muffin pans or place paper cups into muffin pans.
  • 2. Using a wooden spoon, mix all ingredients and blend well. Fill prepared muffin pans 2/3 full. NOTE: you can place a pecan half on top of each muffin at this point if you so desire.
  • 3. Bake at 350 for 12-15 minutes. Check for doneness after 10 minutes using a toothpick or cake tester.
  • 4. FYI: 2/3 cup butter equals 11 tablespoons.

Tips:

  • Use room temperature butter and eggs. This will help the ingredients blend together more easily and create a smoother batter.
  • Don't overmix the batter. Overmixing can make the muffins tough.
  • Be careful not to overfill the muffin tins. Fill each tin about 2/3 full.
  • Bake the muffins until a toothpick inserted into the center comes out clean. This should take about 20-25 minutes.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This will help prevent them from breaking.

Conclusion:

Mini pecan pie muffins are a delicious and easy-to-make treat that are perfect for any occasion. They're also a great way to use up leftover pie filling. With a few simple tips, you can make sure your muffins turn out perfect every time. So next time you're looking for a sweet treat, give these mini pecan pie muffins a try. You won't be disappointed!
