1/4 cup butter, softened
1/3 cup light corn syrup
4 cups confectioners' sugar, divided
1/2 to 1 teaspoon peppermint extract
2 drops red food coloring
2 drops yellow food coloring
Sugar (about 1 cup)

Steps:

  • In a small bowl, combine butter and corn syrup. Add 2 cups confectioners' sugar and extract; beat well. Stir in 1 cup confectioners' sugar. Turn onto a work surface sprinkled with remaining confectioners' sugar; knead until sugar is absorbed and mixture is smooth., Divide into three portions. Tint one portion pink and one yellow; leave remaining portion white. Shape into 3/4-in. balls; roll in sugar. Flatten with a fork. Let stand, uncovered, at room temperature for 1 day. Store in an airtight container.

1 1/2 pounds ground lamb shoulder
2 large garlic cloves, pressed
1 1/2 teaspoons coarse kosher salt
1/3 cup crumbled feta cheese
1 tablespoon finely chopped fresh mint
1 tablespoon extra-virgin olive oil

Steps:

  • Place lamb in large bowl. Sprinkle garlic and salt over. Gently toss lamb to blend. Combine feta and mint in small bowl.
  • Divide lamb into 12 equal mounds. Using damp hands, shape each into ball. Working with 1 ball at a time, poke thumb into center to make hole. Press 1 teaspoon feta-mint filling into hole. Pinch hole closed, then press ball between palms to flatten into 3/4-inch-thick disk. Repeat with remaining lamb and feta-mint filling. DO AHEAD: Can be made 1 day ahead. Transfer to baking sheet. Cover and refrigerate.
  • Preheat oven to 250°F. Heat olive oil in heavy large skillet over medium heat. Working in 2 batches, cook lamb sausages until browned on both sides and cooked to desired doneness, about 3 minutes per side for medium. Transfer sausages to rimmed baking sheet and place in oven to keep warm. Serve hot.

1 onion, finely chopped
1 tablespoon olive oil
2 garlic cloves, crushed
1 small piece ginger, peeled and grated (about1 inch piece)
salt
black pepper, freshly ground
675 g ground lamb (1.5 lbs ground lamb mince)
1/4 cup fresh mint leaves, finely chopped (one handful of leaves)
extra vegetable oil (for frying)

Steps:

  • Heat the olive oil over low heat.
  • Add the onion and cook for 5 minutes until soft.
  • Add the garlic, ginger some salt and pepper. No need to cook these off,but you can cook for a further one minute if wished.
  • Remove from the heat and allow to cool.
  • Add the lamb mince to a large bowl along with the cooled onions and the mint. Season again and mix until thoroughly combined.
  • Roll large balls of the mixtureand flatten to make burger/patties.
  • Sit the patties on a plate and chill in the fridge until firm, if time permits.
  • Shallow fry the burger patties in a little vegetable oil. Fry 6-7 minutes each side, or until cooked through. You can also cook on a grill/griddle pan or barbeque.
  • Serve hot on a roll or with veges or salad on the side.

1 cup margarine
3 tablespoons corn syrup
2 drops peppermint oil

Steps:

  • In a medium bowl, cream together confectioners' sugar and margarine. Blend in corn syrup and peppermint oil. Adjust peppermint oil to taste. Chill 30 to 60 minutes, until firm enough to form into patties.
  • Shape into balls or patties and chill again for 30 minutes more. Eat as is or dip in melted chocolate and chill again before serving.

We made these in our Home Economics class when I was a teenager...and luckily ..one of my classmate still had the recipe...so I thought I would share it.

1/4 c real butter (softened)
1/2 c light corn syrup
4 c confectioners' sugar (divided)
1/2 tsp peppermint extract
1-?? drops of food coloring of choice (amount depends on how much you want)
1 c grandulated sugar

Steps:

  • 1. In a small mixing bowl combine butter and corn syrup. Add 2 c. confectioners' sugar and extract; beat well. Stir in 1 c. confectioners' sugar. Turn out on a work surface sprinkled with confectioners' sugar; knead until sugar is absorbed and smooth.
  • 2. Divide the candy dough into as many different colors that you desire. Add 2 drops of the desired color and work into the dough. Shape into 3/4" balls; roll in grandulated sugar. Flatten with a fork. If you are using a candy mold, follow the same steps, except you will press gently into the mold after rolling in sugar and you will not press with the fork.
  • 3. Let stand, uncovered at room temp for 1 day. Store in an airtight container. You can also separate the mixture and add the separate flavors and food coloring...i.e. red for peppermint...green for spearmint. Or if you prefer one flavor..you can still separate so you can have an array of colors. Next we rolled them in a long tubular shape and rolled waxpaper around the tube..then refrigerated until chilled and cut using bakers string or a slim sharp knife.

Steps:

  • Beat white corn syrup, butter or margarine, mint extract, and 1/2 teaspoon salt. Mix in 1 pound of powdered sugar and knead intil smooth.
  • Color with food coloring as desired. Pat or roll to about 1/4 inch thick. Use small cookie cutters to cut shapes.
