MINTY CHOCOLATE CHIP COOKIES
These taste like a hybrid of a chocolate chip cookie and a Girl Scouts Thin Mint®. I like to make these the week leading up to Christmas as a change from traditional holiday cookies.

MINTY CHOCOLATE CHIP COOKIES
One of my daughters favorite cookies. I would have preferred to add nuts, but she wanted them with just the chips...great either way. Enjoy! My photos

Steps:
- 1. In a mixer bowl ( I used my kitchen aid with paddle attachment.), beat butter for about 30 seconds. Add the sugars, baking soda and salt. Beat until well combined.
- 2. Add the eggs and vanilla, beat until smooth.
- 3. Now, beat in the 3 cups of flour. You may have to beat the last cup in my hand. This is a stiff dough. My mixer handled it, but a regular mixer may not.
- 4. Now, by hand, stir in your chips.
- 5. Using a rounded tablespoon of dough; carefully roll into balls. Place about 2 inches apart onto an ungreased cookie sheet. ( I made mine a golfball size.) Bake for 12 - 15 minutes. Check sooner, as all ovens cook differently. Mine took exactly 15 minutes.
- 6. Cool for a few minutes on cookie sheet before removing to finish cooking in a wire rack. Note: I take my cookies out, while they still look like they have a bit of doughiness to them in the center. They always seem to turn out wonderfully chewy. That's just how we like them.
- 7. Enjoy!
Tips:
- Use good quality chocolate chips. This will make a big difference in the overall flavor of the cookies.
- Do not overmix the dough. Overmixing will make the cookies tough.
- Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
- Bake the cookies until the edges are golden brown and the centers are just set. Do not overbake, or the cookies will be dry and crumbly.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Conclusion:
These minty chocolate chip cookies are the perfect treat for any occasion. They are easy to make, delicious, and sure to be a hit with everyone who tries them. So next time you are looking for a special treat, give these cookies a try. You won't be disappointed!
