MINUTE STEAKS WITH ANCHOVY BUTTER
Steps:
- In a skillet, combine the anchovies, shallot and vinegar. Cook over moderate heat, stirring, until the anchovies break down and the vinegar has evaporated, about 5 minutes. Mash the anchovies with a wooden spoon. Transfer the mixture to a small bowl and let cool to room temperature. Add the butter, herbs and pepper and mix well. Scrape the butter onto a sheet of parchment paper and roll into a log or pack into an airtight container. In a large cast-iron skillet, heat the canola oil until smoking. Season the steaks on both sides with the Montreal steak spice. Working in 2 batches, sear the steaks over high heat for 30 to 40 seconds per side until well browned outside but rare. Transfer the steaks to a rack set over a baking sheet. On a serving plate, stack the steak slices with a big pat of the anchovy butter between each slice. Top with a big pat of butter and serve immediately, dividing the stack at the table. MAKE AHEAD The anchovy butter can be refrigerated for 3 days or frozen for 1 month. NOTES Montreal steak spice, which includes garlic, coriander and cayenne, is based on the spices used in Montreal smoked meat. It's available at supermarkets.

- Combine beef broth, barbeque sauce, hot sauce, and black pepper in a bowl. Add chilled butter to broth mixture but do not stir.

Tips:
- To ensure the best results, choose high-quality minute steaks that are about 1/4 inch thick. Look for steaks that have a good amount of marbling, as this will help them stay tender and juicy during cooking.
- When cooking the steaks, be sure to use a well-seasoned cast iron skillet or grill pan. This will help to create a nice crust on the outside of the steaks while keeping the inside tender and juicy.
- Don't overcrowd the pan when cooking the steaks. If you do, they will not cook evenly and may end up steamed instead of seared.
- Cook the steaks over medium-high heat for 2-3 minutes per side, or until they reach your desired level of doneness. For medium-rare steaks, cook for 2 minutes per side. For medium steaks, cook for 3 minutes per side. And for medium-well steaks, cook for 4 minutes per side.
- Once the steaks are cooked, let them rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the steaks, resulting in a more tender and flavorful steak.
Conclusion:
Minute steaks with anchovy butter is a quick and easy recipe that is perfect for a weeknight meal. The steaks are cooked in a flavorful anchovy butter sauce that adds a delicious umami flavor to the dish. Serve the steaks with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
