MISO CHICKEN

Making a compound of unsalted butter and the salty, fungal deliciousness of Japanese miso paste is a surefire way of adding immense flavor to a simple weeknight meal. Here the mixture is spread over chicken thighs, which are then roasted to golden perfection. But you could easily use it on salmon or flounder, on corn or potatoes. The recipe calls for white miso, which is more mild than the aged version known as red miso. But you could certainly use red for a more intense result.

4 tablespoons unsalted butter, softened

1 tablespoon rice vinegar (do not use seasoned rice vinegar)
Black pepper, to taste

Time 5m

Yield 2 cups

Number Of Ingredients 10

1 cup white miso paste
1/4 cup rice wine vinegar
1 1/2 teaspoons grated fresh ginger
1 1/2 teaspoons sesame oil
1 teaspoon chili paste
1 teaspoon soy sauce
1 clove garlic, grated
1/4 to 1/2 cup honey
1 tablespoon chopped fresh cilantro
Freshly ground black pepper

Steps:

  • Whisk together the miso, vinegar, ginger, sesame oil, chili paste, soy sauce, garlic and 1/4 cup honey in a medium bowl until smooth. Taste for sweetness and whisk in more honey if desired. Stir in the cilantro and season with pepper. Spoon or brush on vegetables, meat or fish.

Tips:

  • Use high-quality ingredients for the best flavor. If you can, use organic or free-range chicken, and fresh, local honey.
  • Don't overcrowd the pan when cooking the chicken. If you do, the chicken will steam instead of brown.
  • Cook the chicken until it is cooked through, but not overcooked. Overcooked chicken will be dry and tough.
  • Use a light touch when stirring the chicken in the pan. This will help to prevent the chicken from breaking up.
  • Add the honey and miso paste to the pan towards the end of cooking. This will help to prevent the honey from burning.
  • Serve the chicken immediately with rice or noodles.

Conclusion:

Miso honey chicken is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The combination of sweet and savory flavors is sure to please everyone at the table. With a few simple tips, you can make this dish perfectly every time.
