½ cup Hellmann's® or Best Foods® Real Mayonnaise
3 tablespoons sweet pickle relish
1 tablespoon prepared mustard
2 dashes Worcestershire sauce
1 dash Hot pepper sauce* to taste
½ small onion, finely grated
6 (1/4 inch thick) slices cooked ham, cut into cubes
1 cup Shredded lettuce
4 medium (blank)s baked biscuits, split

Steps:

  • Combine Hellmann's® or Best Foods® Real Mayonnaise, relish, mustard, Worcestershire sauce, hot sauce and onion with wire whisk in medium bowl. Season, if desired, with salt and pepper.
  • Pulse ham in food processor a few times until coarsely ground. Fold ham into mayonnaise mixture. Cover and refrigerate at least 1 hour.
  • Arrange lettuce on bottom halves of biscuits, then top with ham salad and biscuit tops.

I enjoy entertaining friends at luncheons. They always compliment me on these special little ham sandwiches made on cheesy homemade biscuits. Usually, I use Smithfield ham, but if salty ham is not your preference, any thin-sliced ham works well. -Betsy Hedeman, Timonium, Maryland

1 cup all-purpose flour
2 teaspoons sugar
1-1/8 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons cold butter
1/2 cup 4% cottage cheese
1 egg
3 tablespoons milk
8 teaspoons butter, softened
1/2 pound sliced deli ham

Steps:

  • Preheat oven to 450°. In a small bowl, combine flour, sugar, baking powder, baking soda and salt; cut in cold butter until mixture resembles coarse crumbs. In a small bowl, beat cottage cheese 2 minutes. Beat in egg and milk until blended. Stir into crumb mixture just until moistened. , Turn onto a lightly floured surface; knead 8-10 times. Pat or roll out to 1/2-in. thickness; cut out eight biscuits with a floured 2-1/2-in. biscuit cutter., Place 1 in. apart on an ungreased baking sheet. Bake 8-12 minutes or until golden brown. Split biscuits in half; spread with softened butter. Place ham on biscuit bottoms; replace tops.

12 refrigerated biscuits (2 tubes of 6 biscuits)
1 lb cooked ham, diced
3 celery ribs, from the heart, finely chopped
1/2 cup pimento-stuffed green olives, drained and chopped
1 jalapeno, seeded and finely chopped
4 scallions, finely chopped
1/4 cup Italian parsley, chopped
1/3 cup mayonnaise
3 tablespoons yellow mustard
3 tablespoons dill pickle relish
salt
black pepper

Steps:

  • Prepare biscuits according to package directions, 8-10 minutes in the oven. Cool biscuits on a wire rack.
  • Combine all remaining ingredients in a bowl and adjust seasonings, to taste.
  • Split cooled biscuits and fill with ham salad.
