2 cups sushi or short grain rice
2 cups water, plus extra for rinsing rice
2 tablespoons rice vinegar
2 tablespoons sugar
1 tablespoon kosher salt

It's not really a secret recipe, many restaurants prepare rice this way, but it produces really great rice. More of a technique than anything. This is a response to a request in the forum and I hope you guys like it!

Tips:

  • Use the right rice. Japanese short-grain rice is the best choice for sushi rice, as it has a high starch content that helps it hold its shape and absorb the vinegar mixture well.
  • Rinse the rice thoroughly. This will remove the starch from the surface of the rice, which can make it gummy.
  • Cook the rice according to the package instructions. Be sure to use the correct amount of water and cook the rice until it is tender but still has a slight bite to it.
  • Season the rice with vinegar, sugar, and salt. This is what gives sushi rice its characteristic flavor.
  • Let the rice cool slightly before using it. This will help it to absorb the vinegar mixture more evenly.
  • When shaping the rice, use your hands to gently press it into the desired shape. Don't use too much pressure, or the rice will become sticky.

Making sushi rice at home is a rewarding experience, and it's a great way to impress your friends and family. With a little practice, you'll be able to make perfect sushi rice every time. So what are you waiting for? Get started today!
