Yield Makes 3 cups

Number Of Ingredients 5

1 1/4 cups sugar
1/3 cup water
5 large egg whites
Pinch of cream of tartar
1 pound (4 sticks) unsalted butter, cut into small pieces

Steps:

  • In a small saucepan over medium heat, bring sugar and water to a boil. Continue to boil until syrup reaches soft-ball stage, 238 degrees on a candy thermometer.
  • Meanwhile, beat egg whites on low speed until foamy. Add cream of tartar, and beat on medium high until stiff but not dry.
  • With mixer running, pour syrup into egg whites in a steady stream and beat on high speed until steam is no longer visible, about 3 minutes. Add butter bit by bit. After all the butter has been added, beat for 3 to 5 minutes, until smooth and spreadable. If the icing looks curdled at any point during the beating process, don't panic: keep beating and it will smooth out.

MOCHA MERINGUES

Mocha Meringues image

Light little cookies with a hint of coffee. It won't kill you to make them without cream of tartar. I made these on Christmas Eve, realized I had no cream of tartar, wasn't going to go out and get any (are you crazy?), did without and had a hit. Although it's probably better if you have some.

Tips:

  • Use high-quality chocolate. The chocolate is the star of this recipe, so it's important to use the best quality chocolate you can find. Look for chocolate with a cocoa content of at least 70%.
  • Make sure the egg whites are at room temperature. This will help them whip up more easily and create a stiffer meringue.
  • Beat the egg whites gradually, starting on low speed and increasing the speed as you go. This will help prevent the egg whites from over-beating and becoming dry and crumbly.
  • Do not overcook the meringue. The meringue should be stiff and glossy, but it should not be dry or crumbly.
  • Spread the meringue evenly onto the prepared baking sheet. This will help ensure that the bark is evenly cooked.
  • Bake the bark at a low temperature. This will help prevent the bark from over-browning and becoming too hard.
  • Allow the bark to cool completely before breaking it into pieces. This will help prevent the bark from crumbling.

Conclusion:

Mocha meringue bark is a delicious and easy-to-make treat that is perfect for any occasion. With its rich chocolate flavor and light and airy texture, this bark is sure to be a hit with everyone who tries it.
