4 slices thick-cut bacon, cut crosswise into 1-inch pieces
1 1/2 cups chopped onion
1/3 cup minced peeled fresh ginger
2 (28-ounce) cans original flavor baked beans
1/2 cup mild-flavored (light) molasses
2 tablespoons plus 2 teaspoons apple cider vinegar or distilled white vinegar

Steps:

  • Set oven rack in lower middle position; preheat to 325°F. Heat heavy large pot over medium-high heat. Add bacon; cook until crisp, stirring often. Transfer to paper towels to drain. Pour off all but 2 tablespoons drippings from pot. Add onion; sauté until beginning to soften, about 5 minutes. Add ginger; sauté 1 minute. Stir in beans with juice, molasses, vinegar, and bacon; bring to simmer. Transfer to 11x7x2-inch glass baking dish. DO AHEAD Can be made 1 day ahead. Cover and chill. 1/4 cup diced green bell pepper

1/4 cup molasses
1/2 cup light-brown sugar
1 cup Neely's Barbecue Sauce (page 25)
1/3 cup Neely's Barbecue Seasoning (page 22)
1/2 cup chopped roast (or smoked) pork or beef

Steps:

  • Preheat the oven to 275°F.
  • Heat the olive oil in a large skillet over medium-high heat. Add the bell pepper and onion, and sauté them until they soften, 4 to 5 minutes. 5 quarts water, divided
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups ketchup
1 cup butter, melted
2 large onions, quartered

1 tablespoon Liquid Smoke or barbecue sauce

Steps:

1 large onion, cut into wedges
4 ounces salt pork, diced
¾ cup real maple syrup
¼ cup molasses

¼ teaspoon ground black pepper
2 cups boiling water

  • Soak the dried beans in a large pot of water overnight, then drain. Refill the pot with water, and bring to a boil. Simmer until beans are tender, about 1 hour.

1 lb dried small white beans
2 bay leaves
1 large onion, cut into 6 wedges
3 1/2 ounces salt pork, sliced 1/4 inch thick
3/4 cup ketchup
1/2 cup packed dark brown sugar
1/4 cup molasses
1 teaspoon dry mustard
1 teaspoon fresh ground black pepper

Steps:

  • Place beans in a large bowl and cover with water by at least 3 inches.
  • Soak overnight.
  • Drain.
  • In a large heavy saucepan, combine beans and bay leaves.
