2 cups sugar
2 eggs, slightly beaten
1/2 cup molasses
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
3 tablespoons butter, softened
1 1/2 cups confectioners' sugar
1 tablespoon vanilla extract
1 -2 tablespoon milk

Steps:

  • In a large mixing bowl, cream butter and sugar.
  • Add eggs, and molasses and mix thoroughly.
  • Combine dry ingredients and gradually add to creamed mixture.
  • Shape into 1-inch balls.

  • Frost cookies while warm.

Tips:

  • Choose the Right Molasses: Opt for unsulphured molasses for its rich, robust flavor. Sulphured molasses has a slightly bitter taste and a lighter color.
  • Cream the Butter and Sugar Thoroughly: This step incorporates air into the mixture, resulting in a light and fluffy cream. Cream until the mixture is pale and fluffy.
  • Add Molasses Gradually: Add the molasses in small increments, beating well after each addition. This prevents the molasses from curdling the cream.
  • Chill the Cream: Refrigerate the cream for at least 30 minutes before using. This helps firm up the cream and makes it easier to spread.
  • Experiment with Flavors: Feel free to add spices like cinnamon, nutmeg, or ginger to enhance the flavor of the cream. You can also add extracts like vanilla or almond for a more complex taste.

Conclusion:

Molasses creams are a delightful treat that can elevate various desserts and baked goods. With their rich, sweet flavor and creamy texture, these creams add a touch of elegance and sophistication to any culinary creation.
