Great-Great Grandma Neff's Soft Molasses Cake image

My grandmother used to send me recipes in the mail and this is one that I treasure the most. I refer to it as a snack "bread" more than a "cake". Most people love it for the nostalgic feeling they get when their grandmother's made it when they were children. Great for the cold months with it's warm aroma filling your house. Perfect with coffee or tea after dinner.

MOLASSES SPONGE CANDY

Molasses Sponge Candy image

Categories     Candy     Dessert     Bake     Molasses     Gourmet     Vegetarian     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes about 1 lb

Number Of Ingredients 6

1 1/2 cups sugar
1/3 cup water
3 tablespoons unsalted butter
1/4 teaspoon cream of tartar
1/2 cup mild molasses
2 1/2 teaspoons baking soda

Steps:

  • Line bottom and sides of a 13- by 9-inch baking pan with foil, then butter foil.
  • Bring sugar, water, butter, and cream of tartar to a boil in a deep 3-quart heavy saucepan over moderate heat, stirring until sugar is dissolved, then wash down any sugar crystals with a pastry brush dipped in cold water. Boil without stirring until syrup registers 265°F (hard-ball stage) on a candy thermometer, about 10 minutes. Add molasses (don't stir) and continue to boil undisturbed until syrup registers 295°F (hard-crack stage), 4 to 5 minutes. Remove pan from heat and sift baking soda over syrup, then whisk to incorporate. (Use caution: mixture will bubble vigorously.)
  • Immediately pour syrup into lined baking pan and cool completely. Lift candy in foil from pan, then discard foil and break candy into pieces.

Tips:

  • Use quality ingredients: Fresh, high-quality ingredients will yield the best-tasting cake. Make sure your molasses is pure and unsulphured, and use good-quality butter, eggs, and flour.
  • Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the batter, making the cake light and airy.
  • Gradually add the eggs, one at a time, beating well after each addition: This will help to prevent the batter from curdling.
  • Add the molasses and buttermilk alternately with the flour mixture: This will help to prevent the batter from becoming too thick or lumpy.
  • Do not overmix the batter: Overmixing can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven: This will help to ensure that the cake bakes evenly.
  • Let the cake cool completely before frosting: This will help to prevent the frosting from melting.

Conclusion:

Molasses sponge cake is a delicious and versatile cake that can be enjoyed on its own or with frosting or other toppings. It is a great choice for any occasion, and it is sure to be a hit with everyone who tries it.
