PINEAPPLE-LIME MOLDED SALAD
This is a holiday favorite in the Johnston household. My husband grew up having this for Thanksgiving and Christmas. I usually do it for Easter. As for most of my recipes, this one comes from my late mother-in-law's recipe box.

Steps:
- 1. Measure pineapple juice and enough liquid to make 1 1/2 cups, bring to boil & dissolve jello into it. Cool til syrupy & fold into cheese & pineapple which has been mixed together. Fold in cool whip. Chill. Garnish with nuts & maraschino cherries ( dates may be added).
- 2. Note: though nowhere does it state, I make this in a 9x13 glass pan.
Tips:
- Use a sharp knife to cut the pineapple. This will help to prevent the fruit from becoming bruised.
- If you don't have a fluted mold, you can use a bundt pan or even a regular loaf pan.
- Be sure to let the salad chill for at least 4 hours before serving. This will allow the flavors to meld.
- Serve the salad with a dollop of whipped cream or a scoop of ice cream.
