- Pour batter into ramekins. Place on baking sheet and bake 14 minutes, or until cakes have risen and have a thin crust, sides are set and cakes are slightly jiggly in the center; under baking is better than over baking.

MOLTEN LAVA CAKES - GLUTEN FREE
These are super yummy! You can make them with regular flour if your not G/F! I personally like to bake mine so they are not as soft in the middle but it's a personal choice! I don't always include the 2nd egg yolk and they turn out fine. I love that this recipe makes 2 large or 3 medium cakes! These are my ultimate splurge!

MOLTEN LAVA CAKES - CAROB
I'm always adapting chocolate recipes into carob recipes - the result of an allergy to cocoa! This makes a delicious, moist lava cake, like a brownie on the outside and full of fudgey gooey goodness on the inside.

MOLTEN LAVA CAKES
Steps:
- Preheat the oven to 400 degrees F. In a saucepan over medium heat, melt the butter and chocolate together until the chocolate mixture is smooth. Set aside. Meanwhile, beat together the eggs and sugar with a whisk or electric beater until pale and thick, about 5 minutes. Pour the melted chocolate in the egg mixture and mix well. Blend in the flour, just until combined. Butter and lightly sugar 4 (4-ounce) molds, custard cups or ramekins. Tap out the excess sugar. Divide the batter among the molds. At this point you can refrigerate the desserts until you are ready to eat, for up to several hours, then bring them back to room temperature before baking. Bake the molten chocolate on a sheet tray for 8 to 10 minutes, the center will still be quite soft, but the sides will be set. Let rest for 5 minutes before serving with your favorite ice cream. Cook's Note: Instead of coating the molds with sugar, you can use crushed pistachios or other nuts.

Steps:
- RASPBERRY COULIS: Put all the ingredients in a food processor and puree. Strain through a fine-mesh sieve, pushing down on the solids. Discard the seeds. Taste and add more sugar or lemon juice if needed. Cover and refrigerate until ready to serve. VANILLA CRÈME FRAÎCHE: Put the cream in a large bowl and beat with an electric mixer until soft peaks form. Add the crème fraîche, vanilla, almond extract, and granulated sugar and beat until medium peaks form. Refrigerate while you make the chocolate cakes. MOLTEN CHOCOLATE CAKES: Preheat the oven to 400 degrees. Butter eight 4 to 6-ounce ramekins or individual muffin cups. In the top of a double boiler, combine the chocolate and butter and place over barely simmering water. Stir until melted. Remove from the heat and let cool slightly. In a large bowl, beat the eggs and yolks until frothy. Add the sugar and continue beating until doubled in volume. Beat in the flour. Divide the batter among the ramekins. Bake until the sides are set but the center remains soft, 11 to 14 minutes. NOUGATINE TUILES: Preheat the oven to 350 degrees and line 2 baking sheets with Silpats (silicone mats). In a medium saucepan, combine the butter, corn syrup, and confectioners' sugar. Place over medium heat and bring to a simmer, whisking, and simmer for 1 minute. Stir in the almonds and remove from the heat. Drop teaspoons of the mixture onto the baking sheets about 3 inches apart. Spread out thinly with the back of a spoon. Bake until golden brown, 12 to 15 minutes. Remove from the oven and let cool slightly on the baking sheets. Pat the tuiles with paper towels to remove excess butter, carefully remove from the baking sheet with a metal spatula, and place on a plate alongside the chocolate cakes.
Tips:
- Use high-quality chocolate: The quality of the chocolate you use will have a big impact on the flavor of your molten lava cakes. Look for a chocolate that is at least 70% cocoa solids and has a rich, dark flavor.
- Do not overmix the batter: Overmixing the batter will make the cakes tough. Mix just until the ingredients are combined.
- Chill the batter before baking: Chilling the batter will help the cakes to set up and prevent them from spreading too much in the oven.
- Bake the cakes at a high temperature: Baking the cakes at a high temperature will help to create a crispy outer shell and a gooey center.
- Serve the cakes immediately: Molten lava cakes are best served immediately after they are baked. The centers will start to solidify as the cakes cool.
Conclusion:
Molten lava cakes are a delicious and impressive dessert that is perfect for any occasion. By following these tips, you can make perfect molten lava cakes every time.
