MAMA NEELY'S BAKED BEANS

Mama Neely's Baked Beans image

Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

Yield Serves 6

Number Of Ingredients 11

2 tablespoons canola oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 pound smoked sausage, sliced

1/2 cup light molasses
1/4 cup light-brown sugar
2 tablespoons apple-cider vinegar
2 tablespoons prepared mustard
Dash of hot sauce, preferably Tabasco

Steps:

  • Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Tips:

  • Use dried beans. Dried beans are more flavorful and have a better texture than canned beans. If you use canned beans, be sure to rinse and drain them well before using.
  • Soak the beans overnight. Soaking the beans overnight helps to soften them and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them soak for 1 hour.
  • Use a variety of beans. Using a variety of beans gives your baked beans a more complex flavor and texture. Some good options include navy beans, pinto beans, black beans, and kidney beans.
  • Add some aromatics. Aromatics, such as onions, garlic, and celery, add a lot of flavor to baked beans. Sauté the aromatics in a little bit of oil before adding the beans and other ingredients.
  • Use a flavorful liquid. The liquid you use to cook the beans is important for the flavor of your baked beans. Good options include chicken broth, beef broth, or vegetable broth. You can also use water, but be sure to add some salt and pepper to taste.
  • Add some sweetness. Baked beans are typically sweetened with brown sugar or molasses. You can also add other sweeteners, such as honey or maple syrup.
  • Add some smokiness. Smoked paprika or liquid smoke can add a nice smoky flavor to baked beans. Be careful not to add too much, as it can easily overpower the other flavors.
  • Cook the beans until they are tender. The beans should be tender but not mushy. Cooking time will vary depending on the type of beans you are using.
  • Serve the beans hot. Baked beans are best served hot. You can serve them on their own or with a side of cornbread, mashed potatoes, or rice.

Conclusion:

Baked beans are a classic comfort food that is easy to make and always a crowd-pleaser. By following these tips, you can make the best baked beans you've ever tasted. So next time you're looking for a hearty and flavorful meal, give baked beans a try.
