Momma's Shrimp and Cheese Grits image

I have tried a number of shrimp and grits recipes, but have not found one I really like. So I decided to experiment a bit and created a simple but delicious recipe that will surely please the taste buds. In New Orleans we like our cayenne pepper, so use less if you don't like so much heat.

3 ⅓ cups water
⅔ cup uncooked grits
¼ teaspoon salt
¼ cup butter
½ teaspoon minced garlic
2 green onions, diced
1 (16 ounce) package frozen shrimp, peeled and deveined - thawed
1 teaspoon lemon juice
2 pinches cayenne pepper, or to taste
salt and ground black pepper to taste
¼ cup butter
¾ cup cubed processed cheese food (such as Velveeta®)

Steps:

  • Bring water to a boil in a saucepan; stir grits and salt into the boiling water, cover, and reduce heat to low. Simmer grits until tender, 15 to 20 minutes. Remove from heat and keep warm.
  • Melt 1/4 cup butter in a pan over medium heat; cook and stir garlic until softened, about 2 minutes. Stir in green onions, cooking until green onions are wilted, another 4 minutes.
  • Mix shrimp into the garlic and green onions and cook until shrimp are firm and pink, about 5 minutes. Stir in lemon juice, cayenne pepper, salt, and black pepper.
  • Just before serving, mix 1/4 cup butter into the cooked grits, followed by processed cheese. Mix thoroughly until creamy and cheese is melted. Season with salt and black pepper.
  • Place grits in a bowl, top with the shrimp, and pour pan sauce over shrimp and grits to serve.

I know it sounds like a very bad recipe. That's what I thought too. Crazy thing is *it's really good!. I got it from my mom (who got it from a friend) and after months of bugging me to try it, I did. I was shocked that I liked it. My husband has given it to a few guys at work and all love it.

4 cups chicken broth
1/2 teaspoon salt
1 cup grits (not instant)
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese (with or without peppers)
2 tablespoons butter
6 green onions, chopped
1 green bell pepper, chopped
1 minced garlic clove
1 1/2 lbs shrimp (peeled and cooked)
1 (10 ounce) can Rotel Tomatoes (drained)
1/4 teaspoon salt

Steps:

  • Prepare grits in broth and salt according to package.
  • Reserve a 1/4 cup of both cheeses for topping and combine the rest.
  • In large fry pan saute onion, garlic, and bell pepper in the butter.
  • Add to grits (after grits are prepared).
  • Combine Rotel, shrimp, 1/4 salt with grits.
  • Pour into a 2-quart casserole; sprinkle with reserved cheese.
  • Bake at 350°F for 30-45 minutes. Let stand for 5 minutes and then serve.
  • NOTE: This is rather spicy and I don't handle "hot" to well, so I also tried it with diced tomatoes and not Rotel. It was okay, but to me better with the Rotel.

For my mom's birthday this year I wanted to make something special for her. After searching tons of cookbooks for the "just right" combination of shrimp and grits I have developed this concoction with the help of the Tabasco cookbook and the Best of Bayou Cuisine. Happy Birthday Mom!

2 cups chicken broth
2 cups milk
1 cup quick-cooking grits
1 1/2 cups parmesan cheese
1 teaspoon Tabasco sauce
3 tablespoons olive oil
1 lb shrimp, peeled and deveined (I use the 26-30 count)
salt and pepper
2 teaspoons minced garlic
2 cups sliced fresh mushrooms
4 tablespoons white wine
2 tablespoons lemon juice
1 cup sliced scallion

Steps:

  • Parmesan Grits:.
  • Bring milk and broth to a boil.
  • (WATCH THIS VERY CAREFULLY BECAUSE THE MILK WILL OVERFLOW IF IT GETS TOO HOT).
  • Add grits and cook according to package directions.
  • Remove from heat and stir in the cheese and the Tabasco.
  • (If you prefer firmer grits: Add to the above 1 cup milk, and 2 large beaten eggs; then bake for at 350 for 30 minutes).
  • Shrimp:.
  • Heat large skillet until very hot, add olive oil.
  • When oil is thoroughly heated, toss in shrimp to cover bottom of pan.
  • Before stirring, season with salt and pepper (this will season shrimp in particular, but the rest of the dish as well).
  • Stir until shrimp begin to turn pink all over (let pan return original hot temperature).
  • Stir in minced garlic and mushrooms.
  • Add lemon juice and wine, stir for 30 seconds or until everything is well coated.
  • Toss in sliced scallions and stir for about 20 seconds.
  • Serve over grits!
