MY MOTHER'S MAC AND CHEESE

My Mother's Mac and Cheese image

I remember my mother sending me to the store for 15 cents worth of cheese. The butcher would cut off a slice from a gigantic wheel covered with a wax-coated cloth. Mother would then blend that cheese into this tasty dish. Today, the memory of her cooking is like food for my soul. -Phyllis Burkland, Portland, Oregon

Tips:

  • Use a good quality cheese: This is the most important ingredient in macaroni and cheese, so don't skimp. Use a cheese that melts well and has a good flavor, such as cheddar, Gruyère, or Parmesan.
  • Cook the macaroni al dente: This means that it should be cooked through but still have a slight bite to it. Overcooked macaroni will become mushy and won't hold its shape in the casserole.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the cheese sauce. This will help to prevent the sauce from becoming too thin and watery.
  • Use milk or cream: Milk or cream will help to make the cheese sauce smooth and creamy. You can use whole milk, skim milk, or even heavy cream, depending on how rich you want the sauce to be.
  • Season the sauce to taste: Add salt, pepper, and other spices to taste. You can also add a pinch of cayenne pepper for a little bit of heat.
