1/2 cup margarine
1/2 cup oil
1 3/4 cups sugar
2 eggs
1 teaspoon vanilla
1/2 cup sour milk
2 1/2 cups flour
4 tablespoons baking cocoa
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
2 cups zucchini, finely shredded (press out any excess liquid)
1/2 cup chocolate chips

Steps:

  • There are many versions of this recipe, this one we like the best for our family! Beat margarine,oil and sugar well.
  • Beat in eggs, vanilla and sour milk.
  • Sift dry ingredients and beat into mixture. Stir in zucchini.
  • Pour batter into a greased and floured tube or Bundt pan.
  • Sprinkle top of batter with chips ( Or could stir into batter if you wish ) Bake in a 325F oven 40 to 45 minutes or tested done. Cool in pan 15 minutes and carefully remove to finish cooling.Sprinkle with powder sugar if desired.
  • Freezes well and tastes wonderful!

1 c all purpose flour
SIFT TOGETHER
1 c sugar (i use splenda blend)
1/2 c hershey's cocoa powder
1 tsp baking powder
4 Tbsp crisco or shortening
1 c boiling water
1 tsp baking soda
THEN ADD
1 tsp vanilla extract
1 beaten egg

Steps:

  • 1. Make a hole in the sifted ingredients, add 4TBs Crisco...Pour 1C. BOILING water to which 1tsp Baking soda has been added into the ingredients. Mix but DO NOT beat, then add:
  • 2. 1tsp Vanilla Extract 1 Beaten Egg
  • 3. Mix in, but don't beat.
  • 4. Bake 35~45min at 350^ Makes about 1 1/2 dozen cup cakes or small sheet cake. Double for 3 dozen cup cakes or large pan.

2 stick butter
4 Tbsp cocoa powder
1 c water
2 c all purpose flour
2 c sugar
1/2 c buttermilk
1 tsp vanilla
1 tsp baking soda
1 tsp cinnamon
2 eggs
FROSTING
6 Tbsp butter
6 Tbsp cocoa powder
6 Tbsp buttermilk
1 tsp vanilla
1 lb powdered sugar

Steps:

  • 1. mix sugar and flour in a large bowl
  • 2. heat the butter, cocoa powder and water over low heat until well mixed, pour over dry ingredients
  • 3. Mix extra well
  • 4. add next five (5) ingredients mixing well after each item-this batter gets stiff and then loosens up a little-blew up a mixer making 6 of these for my nieces wedding.
  • 5. pour into a greased an floured pan-I use 11 x 13 inch glass pan-and bake at 400 degrees for 20 minutes.
  • 6. While the cake is baking melt the butter, cocoa powder, buttermilk and vanilla in a pan on the stove-use the one you used originally why clean more than one pan?
  • 7. Mix in powdered sugar until thick.
  • 8. Once cake is done poke it with a knife or fork ALL OVER-mom said if you don't get enough holes the cake is no good-While cake and frosting are still hot pour frosting over cake.
  • 9. Leave cake and all in the pan until halfway cool-that is usually when I give in because the kids have whined so much-cut and serve. I like it warm with ice cream on it.

1/2 c pecans, in pieces
18 1/4 oz yellow cake mix
3 3/4 oz instant vanilla jello pudding and pie filling
1/2 c vegetable oil
1/2 c water
4 eggs
1 tsp vanilla extract
1/2 c dark rum
FOR THE RUM GLAZE
2 Tbsp butter melted
2 c confectioners' sugar
2 Tbsp dark rum or 2 teaspoons rum extract
1-2 Tbsp half and half or milk
1 c pecan halves for garnish

Steps:

  • 1. Preheat oven to 325.
  • 2. Spray a bundt pan well with nonstick spray for baking. Sprinkle the chopped nuts in the bottom of the pan.
  • 3. Mix the cake mix, pudding mix, oil, water, eggs, vanilla extract and rum until well mixed about 2 minutes.
  • 4. Pour over the pecans in the bundt pan. Bake at 325 for 40-60 minutes. Remove from oven and let cool for about 30 minutes before removing from pan.
  • 5. For the glaze melt butter in a saucepan combine with confectioners sugar and rum or rum extract.
  • 6. Mix until smooth adding 1/2 tablespoon milk at a time until it's thin enough to pour over cake but not to thin.
  • 7. You will probably need more of the milk if you use the rum extract instead of the actual rum since you use less.
  • 8. Pour the glaze over the cake letting it run down and over the sides. If your glaze is thick enough your glaze won't run a whole lot. Dot the top and down the sides a little with the pecan halves.

1 1/4 c cake flour
6 medium eggs (separate yolks and whites)
1 orange rind (grated)
1/4 c orange juice, fresh
1 1/4 c sugar
1/2 tsp cream of tartar
1/4 tsp salt
ORANGE FROSTING
4 Tbsp butter
1 orange rind (grated)
6 Tbsp orange juice, fresh
3 1/2 c confectioners sugar

Steps:

  • 1. Beat egg yolks till light. Beat in sugar till mixture is fluffy.
  • 2. Stir in orange rind and orange juice alternately with flour and salt mixture. Beat well after each addition.
  • 3. Beat egg whites till frothy, sprinkle in cream of tartar and beat eggs whites till they hold peaks.
  • 4. Gently fold egg yolk mixture into egg white mixture. Pour into ungreased 10 inch tube pan.
  • 5. Bake 1 hour at 350 degree oven. Let cake cool before removing from pan.
  • 6. Orange Frosting:
  • 7. Cream butter till light, add orange rind. Stir in sugar alternately with orange juice beat until smooth and fluffy.
  • 8. Spread on top and sides of cake.
