⅔ cup frozen peas
3 tablespoons chopped fresh parsley
¼ teaspoon dried thyme
¼ cup all-purpose flour
2 cups lower-sodium chicken broth

MOM'S CHICKEN POT PIE

This is my all time favorite food. I can never get it as good as hers, but it's still delicious. Also, we're both visual cooks, so the measurements may be a little off. Use more cheese if you're a cheese lover like me.

MOM'S CHICKEN POT PIE

Mom's Chicken Pot Pie image

Slightly varying from any other pot pie I've seen on here. I like my mom's hope you will too. Mom makes hers in a 9x9" baking dish, but you can use a regular 9" round pie shell just the same.

CHICKEN POT PIE, KID ROCK'S MOM'S RECIPE

Chicken Pot Pie, Kid Rock's Mom's Recipe image

Provided by á-7889

Number Of Ingredients 12

Two 10-ounce packages Pepperidge Farm Puff Pastry Shells
2 cups diced (1/2-inch ) carrots
1-1/2 cups diced (1/2-inch) celery
3/4 teaspoon kosher salt
1-1/4 cups diced (1/2-inch) onion
3/4 cup frozen peas
9 tablespoons butter
3/4 cup + 2 tablespoons flour
1/2 teaspoon ground white pepper
1/4 cup + 2 tablespoons Better Than Bouillon chicken base
4 cups diced or shredded rotisserie chicken
Milk (optional)

Steps:

  • 1. Preheat the oven to 425 degrees. 2. Set the pasty shells on a baking sheet and bake them according to the package directions. Set aside to cool, then remove the tops. 3. Meanwhile, in a medium saucepan, combine the carrots, celery, salt, and 1-1/2 cups water. Bring to a boil over medium-high heat and cook until just tender, about 5 minutes. Add the onion and boil 5 more minutes. Add the peas to warm them through. Drain the vegetables and run them under cold water to stop the cooking. Set aside. 4. In a Dutch oven, melt the butter over low heat. Whisk in the flour and white pepper and cook, whisking constantly, until the mixture has thickened, about 1 minute. Stir 3 cups water into the chicken base, then add to the pot and cook, stirring, until thick. 5. Add the vegetables and chicken to the sauce and cook until heated through. If the sauce is to thick, stir in a bit of milk. 6. To serve, divide the chicken mixture among the pastry shells and top with the pastry lids. Spoon additional chicken mixture on top, if desired, and some around the base. (If you still have leftover chicken mixture, serve it the next day over mashed potatoes.)

Tips:

  • Use a variety of vegetables. This will give your chicken pot pie a more flavorful and nutritious filling.
  • Don't overcook the chicken. Overcooked chicken will be dry and tough. Cook it until it is just cooked through.
  • Make sure the sauce is thick enough. A thin sauce will make your chicken pot pie soupy. If your sauce is too thin, add a little cornstarch or flour to thicken it.
  • Use a good quality pie crust. A homemade pie crust will be much flakier and tastier than a store-bought crust. If you don't have time to make your own pie crust, you can use a store-bought crust, but be sure to pre-bake it before filling it.
  • Don't overfill the pie crust. If you overfill the pie crust, it will be difficult to seal and the filling may leak out. Fill the pie crust no more than 2/3 full.
  • Bake the chicken pot pie until the crust is golden brown and the filling is bubbling. This will usually take about 30-40 minutes.

Conclusion:

Chicken pot pie is a classic comfort food that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With a little planning and effort, you can make a delicious chicken pot pie that your family and friends will love.
