2 to 3 cup(s) leftover cream of wheat
1 to 2 pound(s) bacon or sausage cooked
- hot maple syrup
2 - scrambled eggs per person

Steps:

  • Take your left over Cream of Wheat (doesnt matter what flavor) put it in the plastic Velveeta container. If you don't have one try a small butter container. The next morning pop the cream of wheat out of the container and slice into 1/2 inch slices.
  • In a large skillet heat up thin layer of bacon grease. Drop the slices of cream of wheat onto the pan, fry on both sides for a few minutes.
  • Serve like a pancake with butter and syrup! Add meat and scrambled eggs and you have an awesome breakfast!!

I guess you would categorize this as the West coast version of fried grits. Take that, Impera_Magna! ;) A recipe from --Tasty's-- Great-grandmother as transcribed by --Tasty's-- grandmother. The fried farina was usually served with bacon and eggs. Nice, huh? Recipe requires 1 day or overnight advance preparation.

3/4 cup farina (Cream of Wheat)
4 1/4 cups water (read *Note)
1/2 teaspoon salt (optional)
farina meal, for dredging
butter
warm maple syrup

Steps:

  • *Note: the directions on the back of the Cream of Wheat box indicate you can substitute milk for all (or part of) the water. I've prepared the recipe using water only and with water/milk especially if there is milk on hand that is close to the pull date.
  • In a pan, bring water (and salt if using) to the boil (or almost to the boil if using milk) and stir in 3/4 cup Cream of Wheat. Stir with fork or wire whisk to break up any lumps.
  • Lower heat and simmer uncovered for 10 minutes, stirring every minute or so. Note: Cooking time may vary depending on which type of Cream of Wheat is used.
  • While still hot, pour the cooked cereal into a 9x11-inch buttered casserole dish.
  • Let cool, cover, then place in refrigerator overnight.
  • Next day, cut the farina up into 16-20 slices. (Another method is to carefully invert the casserole dish over the skillet. The farina will slip out of the casserole dish easily. This is trickier to do though. I find Option A much easier.).
  • Place farina meal in a shallow plate or on a piece of wax paper.
  • Lightly dredge each slice in farina meal.
  • In a large skillet, melt 2 tablespoons butter on medium heat.
  • Add some of the farina slices to the skillet but do not crowd.
  • Fry on both sides until golden brown and crispy.
  • Cook the slices in batches, adding more butter as needed.
  • Arrange on platter and serve with butter and warm maple syrup.

1 ¼ cups all-purpose flour
⅓ cup instant cream of wheat
⅓ cup white sugar
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ¼ cups milk
½ cup sour cream
¼ cup vegetable oil
1 egg
1 teaspoon vanilla extract

Steps:

  • Sift together the flour, cream of wheat, sugar, baking soda, baking powder, and salt in a large bowl; set bowl aside. Whisk together the milk, sour cream, vegetable oil, egg, and vanilla in a separate bowl. Make a well in the center of the dry ingredients, and stir in the wet ingredients. Do not overmix the batter.
  • Heat a large skillet over medium heat. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

MOM'S BAKED FRIED CHICKEN AND GRAVY

For the chicken
1 whole chicken, cut into parts
milk
1 stick (1/4 pound) butter
1 cup flour
1 tablespoon seasoned salt
2 teaspoons paprika
3/4 teaspoon pepper
1/2 teaspoon salt
For the gravy
2 tablespoons chopped scallion
1/2 cup chopped fresh mushrooms
3 tablespoons butter and drippings from baking dish, combined with scraped up crispy bits from chicken
2 tablespoons of the leftover flour seasoned for chicken preparation
1 cup milk
1 chicken bouillon cube (optional)

Steps:

  • Make chicken:
  • Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish (one that will accommodate all the chicken pieces comfortably in one layer) with nonstick vegetable-oil spray.
  • Preheat oven to 400°F. Put the butter in the baking dish and heat it in the oven until the butter melts. Mix flour and seasonings together in paper sack or plastic baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. Remove chicken and set aside in a warm place.
  • Make gravy:
  • Sauté the scallions and mushrooms in the drippings over medium high heat, until soft. Mix the seasoned flour with milk first until you see no lumps. Whisk milk mixture into the sautéing onions and mushrooms. Taste and add bouillon cube, if desired (You may want to use additional milk if you do). Boil until thickened to preferred consistency. Put into a gravy dish and serve alongside the baked chicken.

2 cups milk
1 pinch salt (optional)
1/3 cup cream of wheat (measured dry)
2 eggs
1/2 lemon, juice of
2 teaspoons butter
cinnamon sugar
honey
vanilla sugar
applesauce
fruit cocktail
pears or apricot
fresh berries

Steps:

  • Using a heavy saucepan so as not to scorch the milk, bring the milk & salt just to a boil.
  • Gradually stir in the cream of wheat, whisking (Mom used a wooden spoon) until well blended.
  • Return to a boil. Reduce heat to low; simmer uncovered, 2 1/2 minutes or until thickened, stirring frequently.
  • Meanwhile, beat eggs well with a fork in a glass measuring cup.
  • Add about one tablespoon of thickened hot porridge to the beaten eggs and stir well to combine. Add one more tablespoon of the hot porridge to the egg mixture; stir well.
  • Gradually add the egg mixture into the pot of hot porridge, stirring well to combine.
  • Remove from heat and stir in the lemon juice.
  • Let cool slightly before serving.
  • Top with butter while warm. Enjoy pudding warm or chilled, sweetened to your taste and with fruit toppings of your choice.
