1 egg
⅔ cup all-purpose flour
1 ¾ teaspoons baking powder
½ teaspoon salt
8 slices white bread
4 slices Swiss cheese

⅛ teaspoon ground black pepper
1 tablespoon confectioners' sugar for dusting

Steps:

  • Heat 5 inches of oil in a deep-fryer to 365 degrees F (180 degrees C). While oil is heating, make the batter: In a medium bowl, whisk together the egg and water. Combine the flour, baking powder, salt and pepper; whisk into the egg mixture until smooth. Set aside in the refrigerator.
  • Assemble sandwiches by placing one slice of turkey on one slice of bread, a slice of ham on another, then sandwich them with the Swiss cheese in the middle. Cut sandwiches into quarters, and secure with toothpicks.

Steps:

  • On a work surface, lay out 2 slices of bread and spread with mayonnaise. Top each slice with the 1 slice of Gouda and 1 slice of turkey each. Put the third slice of bread on top of one stack, and flip the remaining stack on top, cheese-side down, to make a triple-decker sandwich.
  • Using a knife, cut the crusts off the sandwich (this helps to pinch and seal the ends). Wrap the sandwich tightly with plastic wrap and refrigerate for at least 30 minutes and up to 6 hours. (Wrapping the sandwich in plastic wrap, compacts it, and prevents the egg batter from seeping in.)
  • Combine the eggs and milk in a bowl. Heat the oil and butter in a skillet over medium-high heat. Unwrap the sandwich and dip it in the egg batter, to coat evenly. Gently place it in the skillet, and fry, turning once, until golden brown and hot, about 5 minutes total.

One of my family's all-time favorites, we really love this simple old-time version of the Monte Cristo Sandwich! It's great for breakfast, brunch, lunch or dinner. Traditionally dusted with confectioner's sugar, and served with red currant jelly for dipping. You can add a dab of Dijon mustard, if desired. Although this sandwich can be quartered and deep-fried, many of the earliest recipes, like this one adapted from 'The Brown Derby Cookbook' (Doubleday, 1949), call for frying it in a skillet, like french toast.

5 tablespoons butter, softened
6 pieces thinly sliced white bread

8 slices firm bread (we use pepperidge farm)
8 slices deli ham
8 slices deli turkey
4 slices American cheese (or you can use cheddar, my kids prefer american)
4 slices swiss cheese
1 egg, beaten
1/2 cup water
1/2 cup milk
1/2 teaspoon salt
1 tablespoon sugar
2/3 cup flour
1 3/4 teaspoons baking powder
2 teaspoons honey dijon mustard
powdered sugar, garnish
maple syrup or jam, for dipping
oil (for frying)

Steps:

  • Assemble four sandwiches using bread, meats, and cheeses. Set aside. In medium mixing bowl (I use a square casserole dish), combine egg, water, milk, salt, sugar, flour, baking powder & mustard. Beat well. Heat about 1" of oil in deep skillet (I use a large iron skillet). Dip your sandwiches into the coating mixture, I like to get them well soaked. They will be drippy -- try to drain off a bit, carefully slide into the hot oil. Repeat with remaining sandwiches. When nicely browned, gently flip over & brown other side. Remove to paper towels. Sprinkle with powdered sugar. Let cool a few minutes before cutting so the cheese doesn't ooze out. Cut each sandwich into four fingers for easy dipping. Serve with syrup or jam.

You will also want to use a nonstick skillet that is at least ten inches in diameter -- the omelet won't fit in a smaller pan.

Kosher salt
2 slices Swiss cheese
1/2 teaspoon Dijon mustard
1/2 tablespoon confectioners' sugar

  • Add the eggs, 1 tablespoon water and 1/4 teaspoon salt to a small bowl and whisk to combine. Spread each cheese slice with 1/4 teaspoon of the Dijon and set the slices mustard-side-up on a flat surface. Put the confectioners' sugar in a small fine-mesh sieve set over a plate.

2 (12 1/2 ounce) packages frozen French toast, slices,thawed

1 tablespoon powdered sugar
2 cups fresh strawberries, sliced

  • Preheat oven to 375^F.
  • Pour milk in a microwaveable container and heat until hot.
  • Whisk eggs in small bowl and add hot milk to eggs, blend.

A basic strata dressed up a little .... easy on the cook, and most of the prep can be farmed out to the kids the night before. Prep time does not include time spent in the refrigerator.

12 slices firm sandwich bread
6 slices deli ham
6 slices alpine lace swiss cheese (Baby Swiss Cheese is a good substitute)
1 tablespoon Dijon mustard
3 tablespoons butter, softened
1/8 cup grated onion
6 eggs
1 cup milk
1/8 cup packed brown sugar
1 dash paprika

  • Butter a 9x12 casserole dish and set aside.

  • Pour egg mix over the prepared sandwiches and cover the casserole with plastic wrap, sealing firmly, and place in refrigerator overnight, or for at least two hours.
  • Preheat oven to 375 degrees F.
  • While oven in preheating, remove casserole from refrigerator, take off plastic wrap and let rest on the counter to lose the "fridge chill".
  • You may want to place the casserole on a rimmed cookie sheet to prevent spills during baking.

10 ounces thinly sliced cooked turkey
6 ounces smoked Gouda cheese, thinly sliced

3 large eggs
1/3 cup 2% milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 teaspoons butter
3 teaspoons canola oil

Steps:

  • Preheat oven to 350°. Spread 4 slices of bread with mustard. Layer with turkey and cheese. Spread remaining bread with cranberry sauce; place on cheese., In a shallow bowl, whisk eggs, milk, salt and pepper. In a large skillet, heat 1-1/2 teaspoons each butter and oil over medium heat until butter is melted. Dip 2 sandwiches in egg mixture; add to skillet. Cook until golden brown, 2-3 minutes per side. 2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 cloves garlic, chopped
3 ribs celery with greens, chopped
1 large onion, chopped
1 jalapeno pepper, seeded and chopped
1 fresh bay leaf or 1 large dried bay leaf
1 red bell pepper, seeded and chopped
Four 15-ounce cans black beans
2 to 3 tablespoons plus 2 teaspoons hot sauce
2 tablespoons ground cumin, a couple of palmfuls
1 1/2 teaspoons ground coriander, 1/3 palmful
Salt and freshly ground black pepper
4 cups chicken or vegetable stock
One 15-ounce can diced tomatoes, diced tomatoes with peppers and onions, or stewed tomatoes
1/2 lime, juiced
8 slices white sandwich bread
1/2 cup hot pepper jelly or chili sauce, tomatillo or tomato salsa, taco sauce - whatever you have on hand
8 slices baked honey ham, from the deli counter
8 slices pepper jack cheese, from the deli counter
8 slices smoked turkey, from the deli counter
2 eggs, beaten
Splash of milk
1 tablespoon unsalted butter
1/2 cup sour cream
2 to 3 scallions, chopped

Steps:

  • Heat a medium soup pot over medium-high heat. Add the oil to the hot pot, then the garlic, celery, onions, jalapeno and bay leaf. Cook 3 to 4 minutes, and then add the bell peppers and continue to cook. Drain 2 cans of beans and add them. Use a fork to mash up the beans in the remaining cans. Stir the mashed beans into the pot and season with 2 to 3 tablespoons hot sauce, the cumin, coriander, salt and pepper. Add the stock and tomatoes to the stoup and bring to a bubble. Reduce the heat to low and simmer, about 15 minutes. Add the lime juice. Remove and discard the bay leaf.
  • While stoup cooks, make the Monte Cristos. Spread the bread with a light layer of hot pepper jelly. Build the sandwiches using 2 slices each of ham, cheese and turkey per sandwich. Beat the eggs with the milk and the remaining 2 teaspoons hot sauce. Sprinkle the eggs with a little salt. Heat a griddle pan or nonstick skillet over medium heat. Melt the butter in the skillet. Dip each sandwich in egg coating and cook 3 to 4 minutes on each side to melt the cheese and warm the meats through.
  • Ladle up the black bean stoup and top with the sour cream and scallions. Cut the Monte Cristos corner to corner and serve halves alongside the stoup for dipping and munching.

1 tablespoon plus 1 1/2 teaspoon olive oil
4 boneless, skinless chicken breasts (about 6 ounces each)
Herbes de Provence
All-purpose flour (for dusting)
3 cloves garlic, sliced
1 shallot, chopped
1/4 cup dry white wine
1/4 cup chicken stock
Juice of 1/4 lemon
1 tablespoon butter
Julienned lemon zest (optional)

Steps:

  • Heat oven to 375°F. Heat oil in a large ovenproof sauté pan over medium-high heat. Season chicken with salt, pepper and herbes de Provence. Dust with flour; tap off excess. Cook, meaty side down, 5 minutes. Turn over; cook 1 minute. Add garlic and shallot; stir 30 seconds. Add wine; cook 1 minute. Add stock; cook 30 seconds. Add lemon juice. Transfer pan to oven. Bake until chicken is cooked through, 9 to 13 minutes. Transfer chicken to cutting board. Place pan over medium heat; simmer sauce 1 minute. Add butter; swirl pan until butter incorporates and sauce thickens slightly. Cut each breast into 4 slices; transfer each to a plate; top with sauce and garlic. Serve with spinach ; garnish with zest, if desired.

6 slices swiss cheese
6 slices lean ham
12 slices bread (use good bread that is not sliced too thin)
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 1/3 cups water
1 large egg
vegetable oil
powdered sugar
raspberry jam
melon (optional)
grapes (optional)
pineapple chunk (optional)

Steps:

  • Place one slice each of turkey, Swiss cheese, and ham on 6 bread slices.
  • Top with remaining bread slices and cut into quarters; hold sandwiches together with wooden toothpicks if needed.

1/4 cup seedless raspberry jam
1/4 cup dijon mustard
2 tablespoons unsalted butter
4 12-inch prepared crepes
8 thin slices Black Forest ham (about 5 ounces)
8 thin slices deli turkey (about 8 ounces)
8 thin slices muenster cheese (about 4 ounces)
1 5-ounce package mixed greens (about 8 cups)
1 small head frisee, torn into small pieces
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Microwave the jam in a microwave-safe bowl until loosened, 20 to 30 seconds. Stir in the mustard; set aside.
  • Heat 1/2 tablespoon butter in a large nonstick skillet over medium heat. Add 1 crepe; stack 2 slices each ham, turkey and cheese on one half of the crepe. Cook until the crepe just starts browning on the bottom and the cheese starts melting, 1 to 2 minutes. Fold the crepe in half over the filling using a spatula, then fold in half again to form a wedge. Flip the wedge and cook until the bottom is browned, about 30 seconds. Transfer to a plate. Repeat to make 3 more crepes. (Remove the skillet from the heat between batches if it gets too hot.)
