8 whole peppercorns
8 whole allspice
4 whole cloves
3 cinnamon sticks (3 inches)
1 bottle (750 milliliters)malbec or other dry red wine
2 cups apple cider or juice
1/2 cup packed dark brown sugar
1/4 cup agave nectar
1/4 cup tequila (preferably Exotico Reposado)
1/4 cup orange liqueur
1/4 cup orange juice
1 large navel orange, sliced
Optional: Orange slices, sea salt, sugar and orange zest

Steps:

  • In a Dutch oven, combine peppercorns, allspice, cloves and cinnamon sticks over medium heat until fragrant, about 2 minutes. Add wine, cider, brown sugar, agave, tequila, orange liqueur, orange juice and orange slices. Bring just to a simmer (do not boil). Reduce heat; simmer gently, covered, until flavors are blended, about 1 hour, stirring to dissolve sugar. Strain; discarding solids. Return mixture to pan; keep warm on low until serving., If desired, using orange slices, moisten rims of glasses. Set aside orange slices for garnish. Combine salt, sugar and zest on a plate; hold each glass upside down and dip rim into salt. Pour warmed margaritas into prepared glasses. Garnish with orange slices. Serve immediately.

6 black peppercorns
2 pieces star anise
1 cinnamon stick
1/4 cup sugar
1/2 teaspoon allspice
1/2 teaspoon ground cinnamon, plus more for serving
1 lime wedge plus 4 lime wheels, for garnish
4 ounces mezcal
2 ounces lime juice
2 ounces orange liqueur, such as Grand Marnier
2 large egg whites

Steps:

  • Chill 4 large rocks glasses.
  • Bring the cider, peppercorns, star anise and cinnamon stick to a simmer in a saucepan. Cook for 5 minutes, then allow to steep for 30 minutes. Strain and allow to cool.
  • Combine the sugar, allspice and ground cinnamon on a small plate. Use the lime wedge to moisten the rim of the glasses, then dip in the spiced sugar mixture.

10 -12 limes, freshly squeezed
