1/2 cup cold fizzy water (sparkling water)

Steps:

  • Pour the oil into a flat, shallow frying pan and place over a gentle heat. Finely slice the garlic and shallots and add to the pan. Fry gently for a few minutes, stirring occasionally and ensuring the garlic and shallots do not start to brown or burn.
  • Prepare your mushrooms by gently wiping any dirt from their surfaces with a piece of kitchen towel - never wash mushrooms as they will absorb the water and become slimy. Slice the mushrooms into chunky pieces and add to the pan, stirring so that they become coated with the oil.
  • Once the mushrooms have all started to colour, pour the glass of wine into the pan and turn the heat up so that the alcohol burns off and the liquid starts to reduce.
  • After a few minutes, the mushrooms should be cooked, so turn the heat back down quite low and add the cream to the pan along with black pepper according to taste. Stir everything around and heat gently for a couple of minutes.
  • Preheat the grill to high.
  • Transfer the mushrooms and cream mixture to two shallow, heat-proof dishes. Spinkle the grated cheese over the top of each and place the dishes under the grill. Keep an eye on these so that they don't start to burn - it should only take a couple of minutes for the cheese to be browned and bubbling.
  • Stand each dish on a large plate (don't forget to warn guests how hot the dishes will be!) and serve with granary toast for mopping up the sauce.
  • Variations:
  • Reduced fat cream such as Elmlea works perfectly in this dish if you are counting calories. You could also omit the cheese and skip instruction point 6.

  • To make the garlic mayo dip: Combine all ingredients in suitable serving bowl and mix thoroughly. Put in fridge covered until ready to serve. If dip is too thick just add more mayonnaise.
  • Remove puff pastry from fridge 20 mins before ready to cook and lay flat on a chopping board. Cut pastry into 10 even rectangles and spread out thinly on flat floured surface.
  • Melt butter in the pan and add the spring onions, garlic and mushrooms. Saute the mixture until mushrooms are cooked making sure not to burn the garlic. Add the mustard, cream and paprika to the mix and combine in the pan. Taste and season with salt and pepper. Then remove from heat.
  • Spoon even amounts of the mixture onto the pastry rectangles and brush beaten egg around edges of pastry. Add a pinch of grated mozzarella and a small cube of butter to each parcel. Fold one edge of the parcel over the mix and tuck in tightly, coat this folded side with beaten egg then fold other half of the parcel over this side. Brush folded parcel with egg and then flatten both ends of the parcel and fold towards the center to seal. Brush finished parcel once more with beaten egg and transfer to a baking tray lined with slightly greased baking paper. At this stage the parcels can be kept in the fridge tightly covered for up to 2 hours before cooking.
  • Put tray in middle of preheated oven (Fan oven 180 degrees) for 15 minutes or until pastry turns a golden brown.
  • While parcels are in the oven wash lettuce and plate drizzled in balsamic vinegar. Quarter the cherry tomatoes and finely chop the raw onion and combine with seasoning. Plate with the lettuce.

8 slices thick-cut bacon

1 pound cremini, white, or shiitake mushrooms, cleaned and chopped, plus sliced mushrooms for garnish (optional)
1 teaspoon coarse salt

1 1/2 teaspoons finely chopped fresh thyme
1 package (8 ounces) cream cheese, softened
2 cups sour cream (16 ounces)

Steps:

  • In a small bowl, soak porcini in the boiling water until soft, about 20 minutes. Working over the bowl, lift out porcini, and squeeze out liquid. Coarsely chop porcini. Pour liquid through a fine sieve into another bowl, and reserve.
