Yield Makes about 1/2 cup

Number Of Ingredients 5

1 teaspoon firmly packed brown sugar
1 teaspoon Dijon-style mustard
2 tablespoons white-wine vinegar
1/3 cup vegetable oil
1 tablespoon minced fresh dill

Steps:

  • In a bowl whisk together the brown sugar, the mustard, the vinegar, and salt to taste, add the oil in a stream, whisking, and whisk the vinaigrette until it is emulsified. Stir in the dill.

Tips for Making Mustard and Dill Vinaigrette:

  • Fresh herbs: Use fresh dill for the best flavor. Fresh herbs have a more intense flavor than dried herbs.
  • Use a good quality mustard: The mustard is the star of this vinaigrette, so make sure to use a good quality one. Dijon mustard is a good option, as it has a nice balance of sharpness and tang.
  • Use a good quality olive oil: The olive oil is the other main ingredient in this vinaigrette, so make sure to use a good quality one. Extra virgin olive oil is a good choice, as it has a rich flavor.
  • Make sure the vinaigrette is well-balanced: The vinaigrette should be balanced in terms of acidity, sweetness, and saltiness. Add more honey or sugar to taste if it is too acidic, or add more salt to taste if it is too sweet.
  • Let the vinaigrette rest for a few minutes before using: This will allow the flavors to meld together.

Conclusion:

Mustard and dill vinaigrette is a versatile dressing that can be used on a variety of salads, vegetables, and meats. It is a light and refreshing dressing that is perfect for summer meals. The mustard and dill add a nice sharpness and tang to the dressing, while the olive oil and honey add a richness and sweetness. This dressing is also very easy to make, so it is a great option for busy weeknights. Try it on your favorite salad or vegetable dish and enjoy!
