HADDOCK ON POLENTA WITH TARRAGON SAUCE

Haddock on Polenta With Tarragon Sauce image

Provided by Jacques Pepin

Categories     dinner, main course

Time 45m

Yield 6 servings

Number Of Ingredients 11

1 tablespoon unsalted butter
1/2 cup minced scallions
6 haddock fillets (each about 1 inch thick and weighing 6 to 7 ounces)
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup dry, fruity white wine
3/4 cup heavy cream
3/4 teaspoon potato starch dissolved in 1 tablespoon water
1 tablespoon chopped tarragon
1 tablespoon chopped chives
Polenta (see recipe)

Steps:

  • Rub the bottom of a large saucepan with the butter. Add the scallions and the fish (folding the fillets in half if they are thin and long to approximate the thickness indicated here so they will cook in about the same length of time). Add 1/2 teaspoon of the salt, pepper and wine. Bring to a boil over high heat, cover, reduce the heat to low, and boil gently for 3 minutes.
  • With the lid held slightly ajar on the pan so the fish don't fall out, pour the cooking juices into another saucepan. Add the cream to the juices, stir in the remaining 1/4 teaspoon salt, and bring the mixture to a boil. Boil 1 minute, add the dissolved potato starch and return to a boil. Remove from the heat and stir in the tarragon and chives.
  • To serve, spoon polenta (see recipe) onto six individual plates. Arrange fish fillets on top of polenta and spoon some tarragon sauce on top.

HADDOCK IN MUSTARD SAUCE

Haddock in Mustard Sauce image

Adapted from the New German Cookbook, by Jean Anderson and Hedy Wurz. Posted for ZWT6. The author included directions for making your own fish stock. If you have the time to make your own stock, please use it here, if not, use the best fish stock you can purchase. I thought this would also be excellent with dill replacing parsley for the final garnish.

NO-WASTE TANGY MUSTARD MARINADE

No-Waste Tangy Mustard Marinade image

This recipe puts a new twist on our economical dressing-in-a-jar idea. Whip up a tangy marinade using the bit of mustard at the bottom of a jar. (We chose whole grain, but Dijon works just as well.) Toss in a few pantry staples, and shake the container. You'll have enough to coat two chicken breasts or one pork tenderloin.

ROASTED MUSTARD TARRAGON CHICKEN

Provided by Ruth Cousineau

Categories     Milk/Cream     Chicken     Mustard     Roast     Dinner     Tarragon     Potluck     Gourmet     Sugar Conscious     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 4 to 6 servings

Number Of Ingredients 8

1 chicken (about 3 1/2 pounds)
1 bunch tarragon, divided
1/3 cup plus 1 tablespoon Dijon mustard, divided
1 1/2 tablespoons all-purpose flour
1 1/4 cups water
1/4 cup heavy cream
Equipment:
kitchen string

Steps:

  • Preheat oven to 425°F with rack in middle.
  • Pull off excess fat around cavities of chicken and discard, then rinse chicken and pat dry. Mix together 1 1/2 teaspoons salt and 1 teaspoon pepper and rub inside cavity. Chop enough tarragon to measure 1 1/2 tablespoons and set aside, then add remainder of bunch to cavity. Put chicken in a flameproof shallow roasting pan or gratin dish and rub all over with 1/3 cup mustard. Tie legs together with string and roast until an instant-read thermometer inserted into fleshy part of a thigh (do not touch bone) registers 170°F, 45 minutes to 1 hour.
  • Carefully tilt chicken so juices from cavity run into roasting pan, then transfer chicken to a cutting board and let stand 10 minutes.
  • Pour off all but 2 tablespoons fat from pan. Whisk in flour, then cook over medium heat, whisking, 1 minute. Add water, whisking constantly and scraping up brown bits, and bring to a boil. Simmer sauce until slightly thickened, then whisk in cream, remaining tablespoon mustard, and salt and pepper to taste.
  • Strain sauce through a fine-mesh sieve into a bowl, discarding solids, then stir in reserved chopped tarragon. Serve chicken with sauce.

TARRAGON MUSTARD SAUCE

Tarragon Mustard Sauce image

Make one of these sauces in the hot skillet after you have cooked chicken breasts or pork chops.

Number Of Ingredients 5

2/3 cup chicken stock
1/3 cup heavy cream
2 tablespoons Dijon mustard
2 stems fresh tarragon, leaves removed and chopped
Salt and pepper

Steps:

  • Remove the cooked chicken or pork from the skillet. Working over medium-high heat, add the chicken stock, heavy cream, mustard, and tarragon. Bring up to a bubble and simmer until thickened enough to coat the back of a spoon, 3 to 4 minutes. Season with salt and pepper and pour over the cooked chicken or pork.

Tips:

  • Choose fresh haddock fillets for the best flavor and texture.
  • If you don't have tarragon, you can substitute another fresh herb, such as dill, parsley, or chives.
  • Use a good quality Dijon mustard for the marinade. It will add a lot of flavor to the fish.
  • Be sure to marinate the haddock for at least 30 minutes, or up to overnight. The longer it marinates, the more flavorful it will be.
  • When cooking the haddock, be careful not to overcook it. It should be cooked through, but still flaky and moist.
  • Serve the haddock with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.

Conclusion:

Mustard-tarragon marinated haddock is a delicious and easy-to-make dish that is perfect for any occasion. The marinade infuses the fish with flavor, and the cooking method ensures that it is cooked perfectly. Whether you are serving it for a weeknight dinner or a special occasion, this dish is sure to impress.
