Crispy grilled lamb or mutton chops drizzled in honey mustard marinade. My wife likes this so much she wants me to make for Christmas dinner this year.

1/3 cup honey
1 tablespoon light soy sauce
1 teaspoon hot English mustard
1/2 teaspoon garlic
4 large lamb chops (I prefer mutton) or 4 large mutton chops (I prefer mutton)
1 tablespoon salted butter

Steps:

  • Put honey, soy, garlic & butter into a small dish & heat gently till it blends easily with a fork.
  • Add mustard to taste. It needs to balance the sweetness & saltiness so you can add quite a bit before it gets hot. Mix well.
  • Coat meat thoroughly with sauce & place under the griller or in an oven (uncovered) at about 200c. (Save a little sauce for when you turn the meat over.).

1/2 kg mutton chops, washed and cleaned (10-12 pcs.)
1 cup beaten plain low-fat yogurt
4 green chilies, washed,ends trimmed and finely chopped
2 teaspoons coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon ginger-garlic paste
1 teaspoon red chili powder
1 teaspoon garam masala powder
1 egg
salt
oil, for shallow frying
2 sliced onions, for garnish
1 sliced lime, for garnish

Steps:

  • In a bowl, mix together the beaten yogurt, ginger-garlic paste, corriander, red chilli, turmeric and garam masala powders, green chillies and salt to taste.
  • Add the mutton chop pcs.
  • Mix well so that the chops are coated well with the marinade.
  • Marinate for 3 hours.
  • Put the mutton chops{no water required} in a pressure cooker and pressure cook till done.
  • Dry the gravy in the mutton chops on clean kitchen paper towels.
  • Remove each piece and keep aside.
  • Beat an egg in a bowl using an electric beater until light and fluffy.
  • Just before serving, dip each mutton chop piece in the beaten egg.
  • Heat oil in a wok.
  • Shallow fry the mutton chops that have been dipped in the beaten egg now in the oil until browned on either side.
  • Drain on clean paper towels to remove excess oil.
  • Transfer the drained mutton chops in a serving platter.
  • Garnish with onion slices and sliced lemon pcs.
  • Serve immediately with a green chutney of your choice.

8 mutton chops
2 -4 black cardamom pods
1 teaspoon peppercorn
2 -3 teaspoons chat masala
5 -6 cloves
2 -3 tablespoons ginger-garlic paste
3 -4 tablespoons gram flour (besan)
1 -2 tablespoon lemon juice
2 -3 tablespoons mustard oil
1 teaspoon mustard seeds
1 teaspoon onion seeds (kalonji)
1/4 cup raw papaya, pieces ground into a paste (this is a tenederiser)
1/2 cup curd yogurt
salt

Steps:

  • Beat the mutton chops with a hammer until they are softened.
  • Mix the raw papaya paste, ginger-garlic paste, salt and marinate the mutton chops in this mixture for an hour atleast.
  • Dry roast the gram flour in a pan till it gives out a nice aroma.
  • Mix this flour onto the marinated mutton chops.
  • Mix all the other ingredients except chaat masala and lemon juice in curd and again marinate the mutton chops for 2 hours.
  • Heat oil in a pan and fry the mutton chops until golden brown.
  • Sprinkle lemon juice, chaat masala and serve hot.
