- Whisk the flour, baking soda, salt, and cinnamon together in a large bowl.
- Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and brown sugar together on high speed until smooth and creamy, about 2 minutes. On medium speed, add the eggs one at a time, beating well after each addition. Beat in the yogurt, mashed bananas, and vanilla extract on medium speed until combined. With the mixer running on low speed, slowly beat the dry ingredients into the wet ingredients until no flour pockets remain. Do not overmix. Fold in the nuts, if using.

- Heat oven to 350 degrees F.
- Grease a 9x5 inch bread pan with a piece of bunched up wax paper.
- Put a little flour in the pan, then tilt and tap the pan to coat the sides with flour. Tap out the excess.
- Sift the flour, baking powder, baking soda, and salt into a mixing bowl and then set it aside.
- With an electric mixer, cream the butter in a separate bowl.
- Gradually beat in the sugar.
- One at a time, crack each egg into a small bowl and beat them into the creamed mixture.
- Blend in the vanilla extract.
- In another bowl, stir together the bananas and yogurt until well mixed.
- Blen the dry mixture and the banana mixture into the cream mixture in thirds, alternating dry and wet to help prevent the dry ingredients from clumping.
