2 pounds lean ground beef
1 cup soft bread crumbs (roughly chopped or torn ½from 3 slices of fresh bread)
1 egg (slightly beaten)
1 15-ounce can tomato sauce divided
½ teaspoon sea salt
½ teaspoon ground black pepper
1 small yellow or white onion (chopped, about 1/2 cup)
½ can tomato sauce
¼ cup water
2 tablespoons Dijon mustard
2 tablespoons vinegar
2 tablespoons brown sugar, firmly packed

Steps:

  • Preheat oven to 350 degrees
  • Place the ground beef into a large mixing bowl
  • Add the breadcrumbs, egg, half the can of tomato sauce, sea salt, pepper and chopped onion, and mix well using your hands
  • Form the meat into a loaf about 2 inches high, and place in baking pan or casserole dish
  • Place loaf into oven, make the glaze, and pour glaze over meatloaf
  • Bake for 1 hour or until internal temperature reaches 160 degrees, according to meat thermometer
  • Pour the remaining half of the tomato sauce into a small mixing bowl, and add the water
  • Add the mustard, vinegar and brown sugar, and mix until well combined

1 lb real lean ground beef
1 egg
1/2 tablespoon onion powder (powder gives stronger flavor) or 1/2 tablespoon minced onion (powder gives stronger flavor)
14 saltine crackers, crushed
1/4 cup ketchup, approx
1 teaspoon Worcestershire sauce
salt and pepper, to taste

Steps:

  • Mix all ingredients together.
  • Form into a loaf and place in a foil-lined bread pan. (There usually is about 2 inches of space on both ends between the meatloaf and the pan).
  • Making sure the top is flat to insure even cooking.
  • You can top it with extra ketchup, if desired.
  • Bake at 425°F for 45 minutes.

6 slices white bread
2 lbs ground beef
1 cup parmesan cheese, freshly grated
1/4 teaspoon seasoning salt
3/4 teaspoon salt
fresh ground black pepper
1/3 cup flat leaf parsley, minced
4 whole eggs, beaten
10 slices bacon, thin
1 1/2 cups ketchup
1/3 cup brown sugar
1 teaspoon dry mustard
Tabasco sauce

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Pour milk over the bread slices. Allow it to soak in for several minutes.
  • Place the ground beef, milk-soaked bread, Parmesan cheese, seasoned salt, salt, black pepper, and parsley in a large mixing bowl.
  • Pour in beaten eggs.
  • With clean hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!).
  • Lay bacon slices over the top, tucking them underneath the meatloaf.
  • Make the sauce. Add ketchup, brown sugar, dry mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
  • Bake for 45 minutes.
  • Pour another 1/3 of the sauce over the top.
  • Bake for another 15 minutes.
  • Slice and serve with remaining sauce.
  • Serve with mashed potatoes. Yummy!

¼ cup ketchup
½ packet dry onion soup mix
3 slices leftover bread (heels are great), torn into bite-size pieces
1 teaspoon Italian-style seasoning
1 tablespoon water
water as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup.

3 thick slices white bread, torn into large pieces
2 garlic cloves, chopped
1 medium onion, chopped
1 celery stalk, chopped
1 medium carrot, chopped
1/2 cup flat-leaf parsley
12 ounces ground beef chuck (90 percent lean), preferably pasture-raised
12 ounces ground pork, preferably pasture-raised
12 ounces ground veal, preferably milk-fed
1 large egg
3/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar

Steps:

  • Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. (You should have about 2 1/2 cups breadcrumbs.) Transfer to a medium bowl.
  • Pulse garlic, onion, celery, carrot, and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, 1 tablespoon salt, and 1/2 teaspoon pepper; mix together using your hands. Transfer mixture to a 5-by-9-inch loaf pan.
  • Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.
