ALMOST-FAMOUS HONEY-ROASTED PEANUTS

Almost-Famous Honey-Roasted Peanuts image

Nuts4Nuts started as a single pushcart in New York City in 1993. But now, on any given day, more than 80 carts are parked all over Manhattan, dishing out little wax-paper bags of warm candied peanuts. Locals and tourists love the signature treat, and they really go nuts this time of year: Sales double during cold-weather months. The business owners won't part with their famous recipe, but the chefs in Food Network Kitchens crafted this version, and it's just as sweet.

Time 30m

Yield 2 cups

Number Of Ingredients 6

Cooking spray
3/4 cup sugar
1 tablespoons honey
2 teaspoons vanilla extract
Kosher salt
2 cups unsalted raw peanuts

Steps:

  • Preheat the oven to 400 ̊ F. Lightly coat a rimmed baking sheet with cooking spray.
  • Combine the sugar, honey, 3 tablespoons water, the vanilla and 1⁄2 teaspoon salt in a large heavy-bottomed pot. Cook over medium heat, stirring with a wooden spoon, until the sugar dissolves. Add the peanuts and cook, stirring occasionally, until the mixture begins simmering, about 1 minute. Continue cooking, stirring constantly, until the sugar mixture dries out and clings to the nuts, 2 to 4 more minutes. Pour onto the prepared baking sheet and spread in an even layer.
  • Bake the nuts until the sugar coating begins melting, about 10 minutes. Stir, then continue baking until the nuts are golden brown and glazed in spots, 2 to 4 more minutes. Remove the baking sheet from the oven and stir the nuts to distribute the caramel. Let cool on the baking sheet. Store, covered, at room temperature for up to 1 week.

Tips:

  • Choose the right peanuts: Select raw, unsalted peanuts that are fresh and free of blemishes. Avoid using roasted or salted peanuts, as they may have added oils or seasonings that can alter the flavor of the roasted peanuts.
  • Soak the peanuts: Soaking the peanuts in water for at least 30 minutes before roasting helps to soften them and reduce the roasting time. This also helps to remove any bitterness from the peanuts.
  • Use a high-quality roasting oil: Choose a high-heat oil with a neutral flavor, such as avocado oil, grapeseed oil, or canola oil. Avoid using olive oil, as it has a low smoke point and can burn easily.
  • Season the peanuts: Before roasting, season the peanuts with a variety of spices and herbs to enhance their flavor. Some popular options include salt, pepper, garlic powder, onion powder, paprika, chili powder, and cumin.
  • Roast the peanuts in a single layer: This ensures that the peanuts roast evenly and prevents them from steaming instead of roasting.
  • Keep an eye on the peanuts while they roast: Roasting peanuts can take anywhere from 15 to 30 minutes, depending on the temperature of your oven and the size of the peanuts. Check on the peanuts frequently to prevent them from burning.
  • Let the peanuts cool completely: Once the peanuts are roasted, let them cool completely before storing them. This helps to preserve their flavor and texture.

Conclusion:

Roasting peanuts at home is a simple and rewarding process that allows you to create delicious and healthy snacks. With the right ingredients and a little patience, you can easily make roasted peanuts that are perfect for snacking, topping salads, or adding to trail mix. So next time you're looking for a healthy and flavorful snack, give roasted peanuts a try!
