Categories     main-dish

Time 3h5m

Yield 6 quarts

Number Of Ingredients 3

7 pounds bones with meat (pork ribs, neck bones and ox tails)
2 cups blended dry red chiles, stemmed and seeded
1 cup dried roasted corn (chicos)

Steps:

  • In a large pot put bones, chile and corn. Cover with water to the top of the pot. Bring to a boil, reduce heat to medium and cook for 3 hours. Keep adding liquid as it evaporates to keep the bones covered.

  • Choose the right neck bones: Beef neck bones are the most common, but you can also use pork or lamb neck bones. Make sure the bones are meaty and have some marrow in them.
  • Brown the neck bones: Browning the neck bones before stewing them adds flavor and color to the stew. You can brown the bones in a large pot or Dutch oven over medium-high heat.
  • Use a variety of vegetables: Vegetables add flavor, texture, and nutrients to the stew. Common vegetables used in neck bone stew include carrots, celery, onions, potatoes, and green beans.
  • Season the stew well: Salt and pepper are the basic seasonings for neck bone stew, but you can also add other spices and herbs, such as garlic, paprika, cumin, or thyme.
  • Simmer the stew for at least 2 hours: The longer the stew simmers, the more flavorful it will be. Simmer the stew over low heat for at least 2 hours, or until the meat is fall-off-the-bone tender.
