4 center-cut bacon strips
2 celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
3 small potatoes, peeled and cubed
1 cup water
1 bottle (8 ounces) clam juice
3 teaspoons reduced-sodium chicken bouillon granules
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
2 cans (6-1/2 ounces each) chopped clams, undrained

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes., In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup. 2 tablespoons diced salt pork or 1 slice bacon
1 finely chopped onion
1 finely chopped celery
1 medium potato, peeled and diced
2 tablespoons all-purpose flour
2 cups clam juice
1/4 teaspoon dried thyme
1 cup chopped canned clams
1 cup heavy cream
2 drops Tabasco sauce
salt and pepper
1 1/2 lbs bread, bowl

Steps:

  • Place salt pork or bacon in a pot and cook 2 minutes over medium heat until crisp.
  • Transfer to a plate and set aside.
  • Add the onion and celery and saute over medium-low heat for 5 minutes or until onions are translucent and celery softens.
  • Sprinkle flour over the mixture and stir into a paste.
  • Add clam juice, potato and thyme.
  • Increase heat and bring ingredients to a boil.
  • Reduce to low and simmer for 15 minutes, or until potatoes are tender.

2 tablespoons unsalted butter
2 large leeks, white and light green part only, diced
2 stalks celery, cut into 1/2-inch rounds
2 medium cloves garlic, grated
2 teaspoons red pepper flakes
Kosher salt
2 cups clam juice
1 cup chopped canned clams
2 cups heavy cream
1 cup half-and-half
4 medium Yukon gold potatoes, cut into 3/4-inch dice
2 bay leaves
Freshly ground black pepper
Splash Worcestershire sauce
Splash hot sauce, such as Tabasco
7 pounds littleneck or Manila clams, scrubbed
1 teaspoon chopped fresh dill

  • Make the base of the soup: In a large saute pan or wide shallow pan, melt the butter. Add the leeks, celery, garlic and red pepper flakes. Season with salt and cook until tender and translucent, 5 to 8 minutes. Add the clam juice and chopped clams. Simmer until tender. Keep warm.

1 large russet potato, peeled and cut into 1/2-inch cubes
2 cups half-and-half

Steps:

  • Rinse the clams several times under cold running water. Transfer to a large pot and add 3 cups water. Bring to a simmer over medium-high heat, then cover and cook until the clams open, about 6 minutes. Strain through a fine-mesh sieve into a large bowl; reserve the broth. Transfer the clams to a bowl and cover with plastic wrap so they don't dry out.
  • Cook the bacon in a large pot over medium heat until crisp, about 10 minutes; remove with a slotted spoon and drain on paper towels. Melt the butter in the same pot over medium heat. 1 bay leaf
oyster cracker, for garnish

  • Place a fine mesh strainer over a medium bowl and strain the 4 cans of minced clams, separating the meat from the juices.
  • Using a 6-quart dutch oven or pot of similar size, fry bacon over medium-high heat until fat renders and the edges begin to crisp.
