2 tablespoons minced fresh basil

8 beef tenderloin steaks (1-1/2 to 2 inches and 8 ounces each)
24 uncooked medium shrimp, peeled and deveined

Steps:

1 tablespoon butter
1/2 pound shrimp, peeled and deveined, chopped
Salt
Cracked black pepper
4 garlic cloves, finely chopped
1 large shallots, finely chopped
2 tablespoons white wine
1/4 teaspoon cayenne pepper
2 sticks butter, room temperature
4 (10-ounce) New York strip steaks
2 tablespoons chopped chives, for garnish

Steps:

  • Preheat grill to medium heat.
  • Over medium heat melt butter in a heavy bottomed saute pan. Add the chopped shrimp, and salt and pepper, to taste and saute for 3 minutes. Add garlic and shallots and continue to saute until shrimp is bright pink and opaque. Stir in the white wine and cook until dissolved. Season with cayenne pepper.
