3 eggs
6 ounces sugar
1/8 teaspoon salt
4 ounces flour
1 teaspoon baking powder
2 ounces butter
2 tablespoons boiling water

Steps:

  • Beat eggs a little with a pinch of salt, add sugar and beat until thick.
  • Fold in sifted flour and baking powder lightly.
  • Lastly add butter melted in the boiling water.
  • Bake in greased deep 8 inch round tin 25-30 minutes at 190 deg C/375 deg F.

NEW ZEALAND BILLY SPONGE

This is from "Jo Seagar's New Zealand Country Cookbook". The author says that it used to be cooked in a billy in a camp oven or coal range. She said it makes a nice dessert with fresh or poached fruit and ice cream or whipped cream. Also great with bacon, bananas and maple syrup for brunch or breakfast. I guess what makes this one is the cracked sugar coating and the "rather chewy texture". I have not made this, but I want to do so. I don't think I would use Pam spray for this because I'm not sure it would create the crackly sugar coating she talks about. I'd use butter. ETA: One reviewer said that a family member really liked this with lemon sauce.

4 eggs
1 cup sugar (plus more for coating tin)
1 cup flour
1/2 teaspoon baking powder

Steps:

  • Grease a 12x23 cm loaf tin. (And grease it well.) Sprinkle sides and base with sugar.
  • Beat eggs until pale and fluffy. Slowly add sugar. Fold in flour and baking powder. Pour into prepared tin. Sprinkle extra sugar on top. Bake at 180 degrees Celsius (350 F.) for 35-40 minutes until top is golden and crunchy and the loaf is cooked through.
  • Remove from tin and cool on wire rack.

4 ripe mashed bananas
2 tablespoons sweetened condensed milk
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 cup brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 cups flour
sugar

Steps:

  • Combine all ingredients till just mixed. Do not overmix.
  • Scoop a heaping spoonfuls into greased muffin tins top each with a bit of sugar and bake at 350 (200 Celsius) for 20-25 minutes, until muffins begin to brown on top. Serve warm with butter. Makes 1 dozen.

This is from "Jo Seagar's New Zealand Country Cookbook." I haven't tried it yet. It sounds kind of like a carrot cake, but...I dunno. The picture doesn't really look like one from the States. It has more fruit and nuts in it than it does flour. It looks and sounds delicious. In the picture, it shows the frosting only going down half the side of the cake.

2 cups sugar
4 eggs
1 1/4 cups oil
225 g crushed pineapple, drained
1 cup chopped pecans (or walnuts)
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 cups grated carrots
1/2 cup raisins (she said sultanas)
250 g cheese cheese, softened
100 g butter, softened
3 cups confectioners' sugar
1 teaspoon vanilla (or essence) or 1 teaspoon butterscotch extract (or essence)
chopped pecans, to decorate

Steps:

  • Beat eggs and sugar until creamy. Add oil and mix well. Stir in pineapple and nuts. Stir in all dry things, followed by carrots and raisins. Pour into a 23 cm (9 inch) deep greased and paper-lined cake tin.
  • Bake at 180 degrees Celsius (350 F.) for 40-45 minutes until firm and cooked in the center. Test by inserting a skewer; it should come out clean. Rest in tin for 10 minutes, then remove and cool on wire rack. Frost when completely cool.
  • FROSTING: Beat everything together until fluffy and creamy. Spread over top and down sides of cake. Decorate with chopped pecans.

But remember to always take care not to overcook scallops or they will become tough. As soon as they lose their translucence and turn opaque, they are done.

1 lb sea scallops
1 tablespoon olive oil
1 red onion, chopped
8 ounces button mushrooms, sliced
1 bell pepper, seed and cut into 1-inch strips
1 tomatoes, chopped
1 avocado, sliced in 1/2-inch strips
1 cup mango salsa
1 cup sour cream
2 green onions, sliced thinly

Steps:

  • Broil the scallops for 4 minutes, then turn and broil 2 more minutes.
  • In a large saucepan, sauté the chopped onion in the olive oil until tender. Add the sliced mushrooms, bell pepper strips, and chopped tomato; cook until all the vegetables are heated through.
  • Arranged the sautéed vegetables on a platter. Top with the broiled scallops. Layer the avacado slices on top of the scallops, then spread mango salsa over the the avacado slices. Top with sour cream, and garnish with green onion slices.
