BEST-EVER MEATLOAF

This meal is designed as a moveable feast for a family get-together on Mother's Day. If you are lucky to have a sunny autumn afternoon, it could be eaten in a sheltered spot outdoors.

Categories     Workday lunches, Midweek Dinner

Time 1h10m

Yield Serves 6

Number Of Ingredients 20

1 large onion, finely chopped
1 clove garlic, crushed
2 tablespoon butter
1 cup sourdough breadcrumbs
1/4 cup milk
1/4 teaspoon fennel seeds
1/4 teaspoon allspice
1 teaspoon salt
1 tablespoon thyme, chopped
1 tablespoon tomato concentrate
1/2 cup grated parmesan cheese
1 medium egg (size 6)
1 medium egg yolk (size 6)
500 gram minced beef
150 gram minced pork
2 tablespoon water
200 gram free-range streaky bacon
2 tablespoon brown sugar
1 tablespoon creamy dijonnaise mustard
5 tablespoon tomato ketchup

Steps:

  • Put onion, garlic and butter in a small frying pan and cook gently for about 10 minutes, until tender but not browned. Cool. Put the crumbs in a small bowl, pour on milk and soften for 15 minutes.
  • Put fennel seeds, allspice, salt, thyme, tomato concentrate and cheese together in a large bowl. Add cooled onion and garlic, scraping in all the butter, then add soaked crumbs and eggs. Mix together then add minced meats and water. Quickly mix together with your hands, just until everything is mixed in; over-mixing will condense the mixture and make the texture of the finished meatloaf too firm. The mixture should be sloppy-ish (if it is too firm it will be dry to eat - add a little more water if necessary).
  • Put a large piece of plastic food wrap on a clean bench. Lay strips of bacon over plastic wrap, keeping them close together. Put meat mixture on top and shape it into a log. Use the plastic wrap to help bring the bacon strips up around the sides of the meat.
  • Carefully transfer to a shallow ovenproof dish (approx. 25cm x 16cm) lined with baking paper, turning loaf over so ends of bacon strips are underneath, pulling away the plastic wrap. Chill for 20 minutes.
  • Preheat oven to 175°C. Mix brown sugar, mustard and ketchup in a small bowl. Bake meatloaf for 45 minutes. Remove from oven and increase heat to 210°C. Pour off any accumulated fatty liquid.
  • Spread the tomato ketchup mix over the meatloaf. Return meatloaf to oven and cook for 15-20 minutes more until brown. Remove from oven and cool for 10 minutes or more before slicing.

TENNESSEE MEATLOAF

My Grandmother 'Nanaw' Rowan made the most delicious meatloaf in the state. When she passed away, she didn't leave me her recipe, but she left me the desire to recreate it. I think this is it, in flavor and texture. Don't let the number of ingredients discourage you. It's part of the magic in creating a masterpiece!

MEATLOAF

Meatloaf image

Originally created as a tasty way to use up leftover vegetables and to stretch meat further during lean times, meatloaf has become the ultimate comfort food. This one is a classic version, blending ground beef, pork and veal with simple pantry seasonings, but you should feel free to use your preferred combination of meat, such as half pork and half beef. Milk-soaked bread ensures a tender meatloaf, and baking it freeform - on a baking sheet instead of a loaf pan - provides more surface area for the tangy-sweet tomato glaze to caramelize as it bakes. Leftover slices can be crisped in a skillet and served with a salad or tucked into a sandwich. Alternatively, freeze one uncooked loaf for the next time you need to put dinner on the table with ease; simply thaw the night before and bake as directed.

Time 2h

Yield 6 to 8 servings (2 loaves)

Number Of Ingredients 16

2 tablespoons extra-virgin olive oil, plus more for greasing
1 large yellow onion, finely chopped (about 2 cups)
5 large garlic cloves, minced (about 2 tablespoons)
2 tablespoons tomato paste
3 (1/2-inch-thick) slices white sandwich bread (about 3 ounces), torn into small pieces
2/3 cup whole milk
3 large eggs
1/4 cup coarsely chopped fresh flat-leaf or curly parsley
2 tablespoons kosher salt
1 teaspoon black pepper
1 teaspoon dried thyme
1 pound ground chuck beef
1 pound ground pork
1 pound ground veal
1/2 cup ketchup
1 tablespoon Worcestershire sauce

Steps:

  • Make the meatloaf: Heat oven to 350 degrees and grease a rimmed baking sheet with oil. Heat 2 tablespoons oil in a medium skillet over medium. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook, stirring, until fragrant, about 2 minutes. Stir in tomato paste until well combined; let cool.
  • In a large bowl, combine bread and milk, and mash with a spoon until a paste forms. Add eggs, parsley, salt, pepper, thyme and cooled onion mixture and mix until well blended. Add the beef, pork and veal, and mix gently to combine, being careful not to overwork the meat. Divide mixture into 2 equal portions and shape each into a 4-by-8-inch meatloaf on the prepared baking sheet.
  • Make the glaze: In a small bowl, whisk together ketchup and Worcestershire sauce until smooth. Use a spoon to spread mixture over the top and sides of each meatloaf. Bake until nicely browned and an instant-read thermometer inserted in the center of meatloaf registers 160 degrees, 45 to 55 minutes. Let rest for 15 minutes before slicing.

Tips:

  • Choose the right ground meat: A combination of ground beef, pork, and veal is a classic choice for meatloaf, but you can also use ground turkey or lamb. If you're using leaner meat, add some extra fat, such as butter or olive oil, to keep the meatloaf moist.
  • Season the meatloaf well: Use a variety of herbs and spices to flavor the meatloaf, such as garlic, onion, parsley, thyme, and paprika. You can also add some grated cheese or chopped vegetables for extra flavor.
  • Don't overmix the meatloaf: Overmixing the meatloaf can make it tough. Just mix the ingredients until they are combined.
  • Shape the meatloaf into a loaf: Place the meatloaf mixture in a loaf pan and shape it into a loaf. You can also make individual meatloaves by shaping the mixture into small balls or patties.
  • Bake the meatloaf at a moderate temperature: Bake the meatloaf at 350 degrees Fahrenheit for about 1 hour, or until a meat thermometer inserted into the center of the meatloaf reads 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for about 10 minutes before slicing. This will help the juices redistribute throughout the meatloaf and make it easier to slice.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With a few simple tips, you can make a delicious and flavorful meatloaf that your family and friends will love. So next time you're looking for a hearty and satisfying meal, give meatloaf a try.
