1 pkg. (7.5 oz.) OSCAR MAYER CARVING BOARD Slow Cooked Ham, chopped
5 eggs, beaten

Steps:

  • Cook and stir onions and peppers in large skillet sprayed with cooking spray on medium heat 5 min. or until crisp-tender.
  • Add water, milk, Potatoes and Au Gratin Sauce Mix; stir until blended. Bring to boil, stirring frequently; cover. Simmer on medium-low heat 12 to 15 min. or until potatoes are tender, stirring occasionally. Remove from heat.

1 pound red potatoes, cooked and sliced
3 tablespoons butter, divided
1-1/2 cups thinly sliced fresh mushrooms
1 cup thinly sliced onion
1 sweet red pepper, cut into thin strips
2 cups diced fully cooked ham
2 teaspoons minced fresh garlic
1/2 cup minced fresh parsley or basil
1 tablespoon olive oil
8 large eggs
Salt and pepper to taste
1-1/2 cups shredded cheddar or Swiss cheese

Steps:

  • In a 10-in. cast-iron or other ovenproof skillet, brown potatoes in 2 tablespoons butter over medium-high heat; remove and set aside., In the same skillet, saute the mushrooms, onion, red pepper and ham in remaining butter until vegetables are tender. This is one of the lighter ones, but you can use full fat ingredients if you want to. Just DON'T SKIP THE BAKING POWDER - you'll be surprised how fluffy this makes your eggs. Enjoy!

1/2 tablespoon olive oil
2 cups potatoes, cut into small cubes
1 cup no fat cooked ham, cut into small cubes
1/2 cup onion, chopped
8 eggs
4 egg whites
2 teaspoons baking powder
1 green onion, sliced
1 cup low-fat cheddar cheese, grated

Steps:

  • Heat oil over medium heat in large nonstick ovenproof pan. Saute potato, ham and onion (not green onion yet) until potato is just tender.
  • Meanwhile, whisk eggs, egg whites and baking powder until frothy and baking powder has dissolved. Add green onion to pan. Gently pour egg mixture into pan, covering the ham and veggie ingredients. Sprinkle cheese over top.

2 teaspoons olive oil
2 red bell peppers, seeded and thinly sliced
1 onion, thinly sliced
2 garlic cloves, minced
1 small white potato, cooked and thinly slice
1/2 teaspoon dried thyme leaves, crumbled
4 eggs
2 egg whites
1/2 teaspoon salt
1/4 teaspoon ground pepper

Steps:

  • In a medium nonstick skillet with an oven proof handle, heat the oil.
  • Saute' the bell peppers, onion and garlic until softened, 7-8 minutes.
