1 cup all-purpose flour
½ cup finely chopped pecans
½ cup butter or margarine, melted
1 (8 ounce) package cream cheese, room temperature
1 cup confectioners' sugar
1 cup frozen whipped topping, thawed
2 (3.5 ounce) packages instant coconut cream pudding mix
2 cups milk
3 cups frozen whipped topping, thawed
½ cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees F). In a medium bowl, stir together the flour, 1/2 cup pecans and melted butter or margarine. Press into the bottom of a 9x13 inch baking dish. Bake for 15 minutes in the preheated oven, then chill until cold.
  • In a medium bowl, mix together the cream cheese and confectioners' sugar until smooth. Stir in the whipped topping. Drop spoonfuls onto the chilled crust, and spread evenly. Return to the refrigerator while you prepare the next layer.
  • In a medium bowl, mix together the pudding mixes and milk. Yes this is half as much milk as the package states. Spread over the cream cheese layer. Chill until set.

1 cup frozen green peas
2 tablespoons reduced-sodium soy sauce
2 teaspoons sesame oil
1/2 teaspoon chili paste, or to taste
1 tablespoon peanut butter
1 cup diced roasted red peppers (from water-packed jar)
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Cook rice noodles according to package directions, adding peas for the last 30 seconds of cooking. In a large bowl, whisk together the soy sauce, sesame oil, chili paste (if using) and peanut butter. Add the diced roasted peppers to the bowl and stir to combine. Drain rice noodles and transfer to the bowl. Toss to combine. Sprinkle chopped cilantro on top and serve warm.

I made this recipe up for my Halloween 2002 party, and it was such a hit that I decided to share it. It looks especially good in a glass bowl, and is a great conversation starter. This recipe would also make a fine St. Pat's Day drink, as it is a beautiful color of green. Simply use clover in the bottom of the bowl rather than Gummi worms

1 ounce apple pucker sour apple liqueur, chilled
1 ounce Midori melon liqueur, chilled
2 ounces 7-Up soda, chilled
1 ounce lemonade concentrate, chilled
1 lb gummy worms, regular variety

Steps:

  • Place Gummi worms in bottom of punchbowl.
  • Add liqueurs and lemonade.
  • Add 7-up to mixture.
  • Stir.
  • For optional ice ring, place in donut-shaped jell-o mold: Gummi worms, just enough to cover bottom of mold, 2 parts lemonade, 1 part Apple Pucker or Midori, whichever you prefer (the alcohol content is low enough that it will still freeze) Place in freezer 8 or more hours before punch is to be serve.
