NORTH CROATIAN BOILED POTATO

North Croatian Boiled Potato image

This is northern version of similar Dalmatian potato. The difference is that it is advisable to take baby spring potato, the one with very thin skin. The best way to do it is to soak potato in cold water, wash it and than grate the potato skin with sharp knife. This side dish is popular in Zagreb region and it is served with various meats and "cuspajz" (spring vegetable stews). It can be done with old potato but it is much better if you have spring one.

NORTH CROATIAN FRENCH BEANS STEW ("CUSPAJZ OD MAHUNA")

North Croatian French Beans Stew (

This is my grandmother's recipe. You can use round or flat French beans (I prefer round and green). We eat this meal as a side dish to meat with potato. You can, of course eat this as a complete dish as lunch. If you want to preserve green color of your vegetables, put them into boiled water. I recommend using fresh vegetable, not canned or frozen - it is much, much better.

Tips:

  • For the best results, use a combination of waxy and starchy potatoes. Waxy potatoes, such as Red Bliss or Yukon Gold, will hold their shape better during cooking, while starchy potatoes, such as Russet or Idaho, will become more fluffy.
  • Make sure to scrub the potatoes thoroughly before boiling them. This will help to remove any dirt or debris.
  • Do not overcook the potatoes. They should be tender when pierced with a fork, but not so soft that they fall apart.
  • If you are using the potatoes for mashed potatoes, drain them well and mash them immediately. This will prevent them from becoming gluey.
  • If you are using the potatoes for a salad, let them cool completely before adding them to the salad. This will help to prevent the salad from becoming watery.

Conclusion:

North Croatian Boiled Potato is a simple but delicious dish that can be enjoyed as a side dish or a main course. The potatoes are boiled until tender and then mashed with butter, milk, and salt. The resulting dish is creamy, fluffy, and flavorful. It is a perfect comfort food for a cold winter day.
